Wino Adulteration.
Honolulu, Mny 20, 188:!.
I'jUiron 1'iiKSS: In nddition to tho drugs
and bookH which I purchased in California,
for making wines, lir.indics mid other
liquors, I hnvo other vnlunhlo testimony
which I think should ho laid before tho pco
plo of theso beautiful Mauds.
At St. Holoua, in tho Najiavnlloyof Cnl
ifornin, I lcnrned thnt tho Wino Growers
Association had recently expelled some of
their members for ndultornting their wines
mid brandies. Whilo walking nloug tho
road, just ontsido tho villngo of St. Helena,
I saw nil open gato loading into tho yard
of a wino cellar. Passing through this
gate, and finding tho door of tho wino col
Inr opou, I entered it, and finding it without
mi occupant I searched tho establishment
from bottom to top including, ns well, tho
distillery for drugs. I was rowarded by
finding n largo wooden box half filled with
pulverized hulphur, a bottlo of tinctmo of
taniu, n bottlo of creosote, n bottle of wine
essence, with iho appliances for using this
nnd other drugs.
This wino cellar nnd distillery was owned
by n man who had been most nctivo in ex
pelling othors from tho Association for
adulteration of liquors.
As a further proof of tho almost univer
sal prnclico of adulterating wines and
brandies in California, I oncloso n copy of
tho Snn Francisco JJaili Chronicle, April
'29, 1882, containing nu nrticlo on this sub
jtct. Tho Uivonicle, you will plcaso ro
nitmber, has always taken tho side of tho
liquor traffic. Very truly yours,
Em Johnso.v.
Following is tho nvticlo :
"In tho fnco of nil inducements to ndul-
torate wino, tho purity of our winos has
boon our great boast and prido, and in it
lay their only superiority to Kuropoan
brands.
In France, Germany and England wo
havo always been given credit for their
3uality, nnd n great futuro for tho wino in
uslry lius been prophesied for us as long
ai wo kept our wines pure; but this futuro
is now threatened, nnd it will not only re
quire the indignnul protest of nil our citi
zens, but tho law must ho invoked to pro
tect the wino industry from tho incubus of
adulteration.
O110 wino maker in 2wpn county ban
openly used glucoso iu tho uiamiacYtirc 0
wine (P) in pito of a vigorous nnd most
commendable protest 011 tho part of tho St.
Helena Viticullurnl Club; nnothor has ex
perimented with it, nnd is reported to havo
said that 'if wino so mado would sell, ho
would timko it;' nod yet auothcr riuiuul
turist is said to bo 011 tho fence. A largo
wino buyer is said to hnvo examined glu
cosed wines ami thnt thoy 'found favor iu
his sight,' and undoubtedly from n pecuni
ary though dishonest point of view, glu-
coee uns many attractions.
By tho use of glucoso, tho product of ti
viueyard way bo iucicascd threefold (Pitiot
claim fivefold) nt a comparatively small
coci of the laud, unci, iu fact, of nil tho op
eration in viniculture, from tho clearing
of the land o Iho nmlring of tho wine, may
be avoided. So it is evident that puro wino
cauuot compote with wine thus adulterated,
when both aro sold (0 tho consumer us
puro. Still nuother maker and well known
authority on viticulture, iu Nnpa county,
