It Means Us
Next week is to be Food Economy Week. Every effort will be mini?
to inaugurate a reign of strict economy and efficiency in the consumption
of all kinds of food, especially such foods us may be needed by our Al
lies. '
Now a great many people doubtless will be saying to themselves if
not openly; "Well, .the little that I eat, one way or the other, is so
little that it really doesn't make any difference."- It is a threadbare
truism to remind ourselves that it is these littles all put together that
will save the situation, and that if it is a little saving, it is also a little
sacrifice, and easily made. Whatever it may be, our country asks it;
shall we not heed the request?
And others perhaps may be saying; "Yes,that is a good thing and
a necessary thing, and I hope the other fellow will heed the call and cut
out waste and. extravagance and luxury.,, And that is as far ns they go.
This is a personal, individual appeal; let everv man, every woman,
everv housekeeper look to the conditions in his own kitchen and on his
own table, and still more perhaps on his own sideboard. Let every one
contribute his little-bit to the grand total. Don't leave it all to the other
fellojv; he may be doing the same thing Jiimself because he sees you
doing it.

SAVE THE WHEAT. One,
wheatkss meal a day. Use corn,
oatmeal, rye or barley bread and
non-wheat breakfast foods. Order
bread twentv-four hours in advance
so your baker will not bake beyond
his needs. Cut the loaf on the
table and oidy as required. Use
stale bread for cooking, toast, etc.
Eat less cake and pastry.
Our wheat harvest is far Ix'low nor
mal If each person weekly saves one
pound of wheat Hour that means
150, 000,000 more bushels of wheat for the
Allies to mix in their bread. This will
help them to save DEMOCRACY.
SAVE THE MEAT. Bee tA
mutton or pork not more than once
daily. Use freely vegetables and
fish. At the meat meal serve
smaller portions, and stews instead
of steaks. Make made dishes of all
left-overs. Do this and there will
be meat enough for everv one at a
reasonable price.
We are today killing the dairy cows
and female calves as the result of high
price. Therefore, eat less and eat no
young meat. If we save an ounce of
meat each day per jK-rson, we will have
additional supply equal to '.'.'.'OO.OOO
cattle.
SAVE THE MILK. The chil
dren must have milk. Use every
drop. Use buttermilk and sour
milk for cooking and making cot
tage cheese Use less cream.
SAVE THE FATS. We are
the world's greatest fat wasters.
Fat is food. Butter is essential
for the growth and health of chil
dren. Use butter on the table as
usual but not in cooking. Other
fats are as good.. Reduce use of
fried foods. Save daily one-third
ounce animal fats. Soap contains
fats. Do not waste it. Make your
own washing soap at home out of
the saved fats.

reasonable price use less candy
