FOR THE SENATE
To the Voters of Kauai:
I hereby announce my candidacy ns
a Republican for nomination at the
forthcoming primary election, for the
Territorial Senate, and solicit the Sup
port of the' voters of Kauai.
The two following recipes are for
fish dishes prepared by Mrs. C. 1J.
Hofgaard for the recent Territorial
Fair. They took first and second
14 ounces of raw fiuh, 1 stalk Haw
aiian celery, 1 big ler.f parsley, 42
corns whole pepper, 2 teaspoons salt,
2 cups water, 2 teaimoons Knox
gelatine, 4 ounces alligator pear, 5
ounces boiled fresh peas, 2 ounces
very fine cut boiled carrots and 1
ounce boiled carrot cut a !a stars.
A little parsley for decoration, 2
hard boiled whites of eggs, chopped
very fine ard served with 6 table
spoons of mayonnaise.
DIRECTIONS Boil slowly the 14
ounces of raw fish with the celery,
parsley, whole pepper, salt and wa
ter, until fish is well cooksd and then
strain. Add enough water (boiling)
to the soup to make 2 cups. Then
take V4 cup of this soup when cooled
off and soak 2'2 even teaspoons of
gelatine. Pick the fish with a fork
in small pieces and on seperato
plates put the alligator pear, finely
cut, the boiled fresh peas, fine sq.
cut carrot using the carrot cut into
stars for decoration, and a little par
sley with the 2 hard boiled whites of
the eggs chopped very fine.
Let the fish soup come to a boil,
then draw aside the pot on tho stove
and add tho soaked gelatine, but do
not boil this, when the gelatine is dis
solved in the soup pour this into tho
fish mold so that all sides are touch
ed, put soup back in pot then in the
fish mold put the carrot stars, with
parsley in between, add one long
row of boiled peas in the middle and
cover it all with the hard boiled
whites of eggs then mid layers of
fish, alligator pear, carrot mid peas
and over all pour tho rent of tho
soup. When cool" put on lee. Make
the day before it is to bo used.
This serves six persons.' servo with
six spoons of mayonnaise.
Note If you haven't all'cator pear
use fresh boiled lima beans or white
wax beans or asparanus tips and tin
peas, (drain off the water.)

ground mace, tsp. ground ginger,
1V6 tsp. corn starch. 1 cups un
sweetened tinned milk. (&milk and
V2 water), 1 egg, well beaten, 1 this,
corn meal, 1 tsp. crisi.o. Steam 1
hour and 40 minutes. Serve to 4
Gravy for FISH PUDDING
1 cup fish soup, 1 (italic Hawaiian
celery, 1 leaf parsley, 10 corns whole
pepper, 1 tsp. salt, 1 lids, rice flour,
1 well beaten yolk of egg, 1 this,
Scrape fish from tall up, take skin
of the suet and cut suet very fine.
Grind fish once alone then add the
suet and grind 4 times together,
scrape carefully out all suet and fish
from grinder and put it in a black
iron pot, then pound the substance
adding gradually the milk a very
little at a time, alsa the salt, mace
and ginger. Scrape from sides all
the time, so Buet and fish get well
mixed, when all the milk is used up,
add the corn starch and pound it in
well, then add at last a well beaten
egg. Crlsco your pudding mold, a
small lard tin can be used, then put
in 1 tb is. corn ureal, put on cover
and shake it good all round, pour in
the fish substance, close the tin and
steam for one hour and 4'i minutes.

meats, fats, and sugar should be cc
Fresh milk and milk in evaporated
and ondensed form and cheese may
be liberally used.
