Green Papaia Pickle.
Take a large green papaia, peel, re
move the seeds, and cut Into 2 Inch
pieces, sprinkle well with cooking salt
and let stand for 24 hours. Pour off
the Bally water and place pulp In a
sauce pan with enough vinegar to
cover, 1 cup of suijar, a few chillies,
1 tbls. curry-powder, 1 tbls. mustard,
1 tsp. salt, and 2 pieces of tumeric,
allow to boil slowly for from 2V4 to
3 hours. When cold, bottle. It Is
ready for eating when cold, but Is
much nicer when kept for a little
while.
Green Papaia Jam.
Cut a green papaia Into 2 Inch
pieces and let It lie In sugar over
night, allowing 1 cup of sugar to each
cup of fruit. In the morning add the
juice of 2 lemons and boil the mix
ture slowly for 3 hours. White sugar
should be used .
Pickled Limes.
Cut limes into quarters, remove the
pips and hard centres, and place In a
china basin. Cover with a good
sprinkling of salt, and allow to stand
for 12 days, turning them over each
day. Make a syrup of vinegar and
sugar, add a few chillies, and pour It
over the limes. When cool, lottle.
Guava Chutney

Department.
Cook together until thick 6 pounds
of guava pulp, 2 pounds brown sugar
and 2 quarts of vinegar. Add 2 pounds
raisins, 1 onion or 1 head of garlic,
and boil down. Affer removing from
the fire, add 1 T. powdered muctard,
4 T. salt, and 2 small red peppers.
Carrot Marmalade.

3 pounds carrots, 4 pounds sugar or
8 cups, juice of 6 lemons, rind of 2,
1 pound blanched almonds. Cook car
rots until very tender, then mash In
potato masher, but not to fine. Add
sugar, the lemon juice and the rind of
2 lemons ruii through the meat grind
er, also chopped nuts. Cook gently
from 15 to 30 minutes. This should
be eaten soon, as it does not keep
very long.

were received from the Food Adminis-tion.
Endive Salad.
Carefully pick over crisp endive,
sprinkle with salt and pepper, and add
a green pepper sliced thin. Pour over
all, vinegar to taste.
Romaine Salad.
Take broad, shredded romaine let
tuce leaves, and sprinkle with French
dressing to which has been added a
clove of garlic.

Lettuce and Tomato Salad.
Slice large tomatoes very thin after
removing the skin, and lay them on a
platter garnished with head lettuce.
Serve with mayonnaise dressing.
Mayonnaise Dressing.
(Quick Method.)
1 tsp. mustard, 1 tsp. salt, 1 tsp.
powdered sugar, few grains of cay
enne, yolks 2 eggs, V cup vinegar.
