Possibilities of Utlll2ittloiior Wnnlo
Fruit In lltwnM.
At present, when considerable
areas arc planted in bananas, and
when Hawaiian bananas seem to
find n solid footing in the markets
of the Pacific Coast, the question of
utilization of small bunches becomes
of practical importance.
With all care in cultivation and
fertilizing, there will always be a
considerable percentage of small
bunches. There will be another
number of over-ripe and damaged
fruit that cannot be marketed. At
the time of fruit harvesting in Cali
fornia bananas are not wanted, and,
if scut, are sold below the cost of
transportation. At such times the
whole of Hawaiian bananas, large
and small bunches, have to be util
ized some way or other, if we pro
pose to carry on the industry on
business principles.
One of the best ways to utilize
all such bananas is to distill them
into banana brandy. The produce
of banana distillation gives very
pure brandy, remarkably free from
fusal oil and other undesirable and
hurtful ingredients.
It possessed a peculiar, agreeable
banana flavor and ought to be very
acceptable on the liquor market,
not less than dry grape brandy or
ordinary cognac.
Not long ago, as published in the
"Tropenpflauzer," the German
magaziue of tropical agriculture,
experiments in fruit distillation
have been made with the assistance
of the government in 'Victoria,
Cameroon, German West African
possessions. The results of these
experiments are as follows:
One hundred quarts of ripe
banana mush produces 12 quarts of
pure, absolute ( ioo) alcohol, or 24
quarts of 500 strong brandy, viz,
about 24 of the volume of peeled
and pounded bananas.
Pineapples give 12 of pine
apple brandy of 500 strength when
treated in the same way. .Tliis
brandy possesses still higher spe
cific pineapple flavor and also
comes out very pure. Papaias dis
tilled without the seed give 5 of
pure (ioo) alcohol equal to 10 of
50 brandy. The presence of seed
gives papaia brandy too spicy a
taste.
Thus an average bunch of 40
pounds weight of bananas ought to
produce 10 quarts or 2 gallons of
strong 500 brandy. Allowing the
cost of bananas to be one cent a
pound, the value of material per
gallon of brandv will be only" 16
cents or 4 cents per quart of brandy.
Such is one of many practical,
obvious and remunerative Hawaiian
industrial possibilities. If the com
munity fails to see it, it is their
fault, and, such being the case, it
is preposterous to complain of bad
times and all sorts of pilikias of our
own creation. Civilized progres
sive men make their own "times"
and environment to suit themselves.
Only rotten, stagnant conservatism
depeuds on rains, drouths, times,
luck and other natural and imacin-
ary conditions, praying before the
fox hole when it comes too bad.
It serves him right. The present
experience of Russia ought to put
all the rest of "conservative" coun
tries, including these Islands, to
some sort of thinking, if they have
left in them something to think
with. DR. N. RUSSKL.

Demand For Human llnlr.
The largest dealers in human
hair in New York, who practically
supply the hair crop for the entire
country, are authority for the state
ment that the demand for this
commodity was never as great as it
is at pressnt. The result is that
the price of all shades and styles of
human hair is rapidly soaring up-
ward. 1 here has been an advance
in the price of first-class hair of
from 30 to 50 per cent, within the
last three months. The present in
dications are, judging from the size
of the crop now being imported,
that there will be a still further ad
vance in prices duriuir the winter
months. One dealer said to-day.
mat it is almost impossible to
supply the demand for first-class
gray hair. A wig of pray hair, a
wig of gray human hair of fine
quality is worth its weight itibilver,
or perhaps even in gold. '
