The demonstration lectin e given at
the Boston Cooking School lately by
Mrs. Dearborn was one of utntstial
intcicst. Thcro was n good sized
class present, and the following re
ceipts were prepared :
South Down Sou. Simmer lui
pounds of lambs' shins for six hours,
having them just covered with water.
When cold, remove the fat, season
with salt, mace and celery. To each
(juait of stock allow one teaspoon of
line tapioca. Cook for ten minutes
and setve. This is dclicioift and in
Baki-.o Ri.uk Fish. Clean, wipe
and dry tho llah; tub well with salt
and lemon juice; stuff and sow.
Spi inkle with salt and pepper and
nib with soft butter; dredge with
Hour and bake in a hot oven, allow
ing 15 minutes for each pound, bast
ing often with melted butter and
water, and dredging each time with
salt, pepper and Hour. For tlie slim
ing take one cup of stale bread
crumbs, one teaspoon of sail, one
saltspoon of pepper, one-quartei cup
melted butter, measured after it is
melted, one teaspoon of chopped
parsley, oiTe teaspoon of dry capers,
one tablespoon of lemon juice and
one beaten egg. Mix these all well
Siinuip Sauck. Make one pint of
drawn butter with two tablespoons
of butter, one heaping tablespoon of
Hour, one-half a teaspoon of salt,
one-half a salt spoon ol pepper, one
pint of hoi water and one egg yolk.
Add one can of shrimps cut in small
pietes and serve with the fish.
Ilor Slaw. Shred 1 cabbage fine.
Mix the yolks of 3 eggs, one-half a
cup of vinegar, one-half a cup of
water, one teaspoon of sugar, one
teaspoon.of salt, one-half a teaspoon
of made mustard, and a few drops of
essence of pepper or a few grains of
cayenne. Put all together In a
double boiler and cook unlil it thick
ens, slit ring frequently.
Quni.N Mli fins. Cream one-half
a cup of butter, add slowly one cup
of sugar. Mis 2iJ cups of pastry
'Hour with 3 tablespoons of baking
powder; add to Tile lirst mixture,
alternative with one cup of milk.
Add two well-beaten eggs. Bake in

Chocolate Fmttkks. Put one cup
of water and one cup of butter on to
boil ; when boiling, add one cup of
flour ; cook until smooth, stirring con
stantly. Remove from the fire and
beat in 4 eggs, one at a time. Drop
by spoonfuls into hot fat and cook
until they expand ani are hollow in
the centre. Drain on paper, split
and till with
Ckkam Mixture. Scald one pint
of milk. Mix lj cups of sugar, a
scant half cup of Hour, one salt spoon
of salt and two eggs beaten slightly.
Pour over the hot milk. Cook in a
double boiler 10 minutes, Stirling
often at fust. Add 2 J squaies of
Baker's chocolate, melted, and one
teaspoon of vanilla. Serve with
Vanilla Sauou. Cook one-half a
cup of water, one cup of sugar.
When boiling add one large table
spoon of eornstaich dissolved in a
little water. Cook until transparent,
and add one tablespoon of butter and
one tablespoon of vanilla. The frit
leis should be served hot but the
filling and sauce may be cold.
Banana Ici: Ckkam. Mix one
quart of cieam and one cup of sugar
together. Rub three lame, rieli ba
nanas through a sieve, add to tlicm
the juice of half a lemon. Mix with
the sweetened cream and freeze
slowly. Boston Journal.
