Dried Figs. The exsiccation of
the fig 'in the Mediterranean and
Asiatic countries is very simple, and
Ihough varying slightjy in method
may be generally stated as follows:
.The figs-are gathered wjien well ripe
and spread over a lattice raiaeu from
the ground to allow free circulation
of air. They are exposed to tho
action of the sun for'from 12 to 15
days, care being taken to turn them
over alternately every 2 or 8 days.
Any, rain or dampness during this
period would be ruinous and they
frequently have to resort to ovens to
complete thu drying process. In
some places after drying they aro
plunged in hot water to destroy eggs
of Insects that may have been de
posited when drying.
The California State Board of Hor
ticulture has recently made extensive
experiments in the exsiccation of the
fig, Hailing that the published for
eign methods were unreliable, and
seemingly published with intent to
deceive, for the Asiatic fig growers
aie jealous of their industry, feaiing
competition from other countries.
The reports fiom the California ex
periments recommend two methods
wbioh have proved to be successful
in producing a tlrst class quality of
dried Gg. The first process is as fol
lows: "The figs are allowed to shrivel
on the trees, then they are peeked
and placed on latticed trays to allow
ventilation from the bottom. These
trays are than placed in a smoke
house apd exposed to the carefully
regulated fumes of burning sulphur
for about one hour. The object is to
allow the fruit to undergo an artifi
cial sweat to reduce the skin. They
are next exposed tothe sun for about
4 days, being turned over occasion
ally. After all signs of moisture
have disappeared, the fruit is plated
in wire baskets and dipped in boiling
water. This closes up the pores,
kills all germs, reduces the skin and
gives'tho fruit a beautiful color. The
fruit is dipped and raised immediately
two or three times. After the water
is all drained lluow them in a pile
and shovel back and forth until en
tirely cooled off. When the moisture
has entirely evaporated it is time to
pack. They arc usually selected in
two or three grades and each layer
in the boxc3 dusted with granulated
sugar."
The. second process is stated as
follows: The fruit is picked from
the trec'whcu it has shriveled con
siderably' and is placed on latticed
trays without sulphuring, the bloom
end first towards the sun as it con
tains more moisture. After two day9
they are pulled and rolled between
the fingers, and turned over on the
trays. Wlien well dried they are
placed in boxes in. a stort -house for
t! or 8 days to allow them to undergo
a natural sweat. Eacli day empty
one box into another to allow the bot
tom ones to come on top. After all
the moisture bus disappeared they
aro ready for packing, first selecting
itito two or three grades. Before
packing, the figs are dipped in a so
lution of hot water containing a little
glycerine or glucose. This serves to
give the fruit a gloss which it does
not possess before dipping. Some
times they are given a sulphur bath
to slop discoloration, brighten the
fruit and deoxidize any qcnns, but it
tends to detract from the flavor.
Properly cured tigs may be pre
served for several years if not ex
posed to the air. The method of sun
drying, however, is more or less un
certain, and now not only in America
but in. other pints of the world the
"American Fruit Evaporator" is be
ing used to dry the ilg as well us other
fruits. Its operation has proved sat
isfactory and this machine is likely
to come into general use by fig grow
oi s. This i the same machine referred
'to in the article on tho "Guava."
Of the many vnrieties of figs grown
there are but few that are suitable
for drying and those only that aro
light colored. In California the White
Adriatic is found, the bust for drying.
The BramTutkey, if well sulphured,
will cure almostas beautiful as the
Adriatic. Both figs are now being
generally utilized for drying. Iu
Florida the White Genoa and White
Adriatic are used for dryiug aud 'J
other varieties aio cultivated for the
fresh fruit,
It has been doubted whether the
Smyrna fig could bo reproduced from
seed and some of the most learned
botanists of Kuropo have given pro
found sludv to its chaiacter and ori
gin, for oimig to the jealousy of tho
Smyrna growers it has been almost
impossible to introduce it into oilier
countries.
In tho Report of the California
Stale Hoard of Horticulture ISH'J.'JO,
K. W. Maslin of Loomis states in an
essay that previous to his experi
ment there whs not a genuine Smyrna
Ilg in the United States. lie says:
