Fair oxhibit, lectured at Now Por-
alta Hall, zllil California street, last
night on "Tho Chemistry of the
Kiti'hen." Tho audience was not a
larpjo ono and was chiefly eouiposod
of ladies. Professor Allen advanced
some theories in regard to tho pro
per method of preparing food for
tho table, which are greatly at vari
ance with tho rules followed by tho
average housewife, who would prob
ably require a great amount of ex
planation and argument before ac
cepting tho now methods as an im
provement over her own.
Professor Allon told his audienco
that the great mistake made in cook
ing is in having too hot a firo. In
roasting a piece of meat tho oven
should bo at a temperaturo of -100
degrees when tho meat is put in.
Tho great heat will serve to inclose
the meat in a crust so tho juices will
be retained. Tho oven should cool
after tho meat has boon in about
livo minutes and the temperature
reduced to about ICO degrees. With
tho oven at this temperature tho
blood in tho meat will bo Blowly
coagulated and tho roasting per
fectly douo. It can bo left a long
time without danger of spoiling.
A great mistake is always made in
boiling eggs. Tho housewife dumps
tho eggs into a kcttlo of boiling
water and allows thorn to remain
four or livo minutes, whoreas tho
proper way is to pour water, heated
to about llX) degrees, 52 degrees less
than tho boiling point, on tho eggs
and allow them to stand without
boiling. They can remain a half
hour, and are then perfectly boiled.
In cooking a steak the tire must
bo hot and tho grill close to tho
coals. If a pan is used no butter or
fat should bo placed in it, and the
steak should bo turned frequently
and not allowed to sizzle and dry
Professor Allon stated that tho
chemical properties in foods aro
destroyed by the methods generally
pursued in cooking. Not only is
this true of moats, but also of vege
tables, and if the suggestions offered
by him were followed out, aud food
prepared by a slow process rather
than in a rush aud hurry, more
gratifying results would bo obtain
