THE HUfTER QUESTION.
Editor Bulletin: I toko a
good many of ray meals at Ohi
noso roatuuranta and have never
as yet obtained a Rood, wholesome
pieco of butter in one of thorn. If
I go to a grocer's to purchaso
butter I am shown "Coast," "Ha
waiian," oaniii'd and, in fact, a
dozen variotie-j. 13ut it is all
callod butter. Ono never hears of
oleomargarine, colored lard or
butterino. Fifteen years ago the
dairy business in tho state of Illi
nois was aln. mt ruined by tho
market being flooded with tho
imitation buttor. After struggling
along for two or throo years the
propiiolors of creameries com
bined with tho farmers and de
manded some legislation which
would protect thoir interests.
Tlioy got it. Oleomargarine is
sold as bucIi and tho penalty for
diannsiiiL' of it as buttor is S500
for tho first offence. If needed
on restaurant tables, tho pro
prietor must hang hirgo placards
upon his walls boaring tho
inscription "Oleomagarino isod
hore," or whatever imitation may
bo supplied to patrons. Tho ox
aniplo bet by tho Illinois dairy
nion litis boon followed largely all
ovor the United States and, as a
consenuenco, thoro is money to bo
niado in tho manufacture of tho
gonuino articlo and the public is
Biipplied with a good, nutritious
product.
"Why cannot our local dairymen,
now that the legislature is in Hes
sion, abk for tho sumo kind of
legislation horo' It would mater
ially assist thdr interests anil
would most assuredly work no
hardship upon others. If a cer
tain class of consumers desiro
pink lard, lot thorn have it by all
mnnTiH. hut iiiRist, that tho whole
saler and retailor shall sell it as
such. If tho gentle Pako wishes
to grease his patrons' palates with
a comoosition Of cotton
seed oil and annatto, grant
him tho privilege, but
compel him to inform us of tho
fact.
Tho ostonsiblo buttor now on
salo is a nasty, villainous product
and it is horriblo to sit down to a
table and have to oat it. Our
dairymen might not bocomo of
fensively rich in six montliB but
they would surely find dairying
more profitable. Ain't that so?
you bettor bolievo I'm right.
Oleo.
