HOW TO MAKE CABINET PUDDINGS.

Butter and sugar 0 small earthen
cups; small teacups will do, as they do
not appear on tho tabic Fill them about
half full of "lady lingers" cut in dico
and mixed ovenly with 2 tablcspoonfuls
of currants and 1 candied citron cut in
tho thinnest bits. Preparo a custard of a
pint of cold milk, 8 eggs and 4 tablo
spoonf uls of sugar. Season tho mixture
with ouo-quarter of tho yellow rind of
n lemon and pour tho custard gradually
on tho pieces of "lady fingers" in tho
mold, so that it will bo absorbed. Set
tho cups in boiling water as before, and
let tho pudding bako 40 minutes. Set
them away to bo cold, and then put
them on tho ico.
When they aro well chilled servo them
with a saucoof whipped cream. Beat to
a stiff froth half a pint of rich cream.
Add 2 heaped tablcspoonfuls of pow
dered sugar, sifting it in. Continue to
beat and add slowly half a cup or a
wineglass of maraschino or sherry if

a low crystal platter, each surrouudod
