tho iuot delicious of all cream soups.
Select tho green, unbleached asparagus,
even u tlio stalks aro smaller. Half a
bunch will mnko thrco pints of wwp.
Cut off tho tips aud lay them asido to
bo used as a garnish for tho bonp. Cut
tho remaiud r of tho half buncJi in
fcniall pieces and throw it in three pints
of white stock. Add a sprig of thyme,
n bay leaf, a spray of soup celery nnd 6
sprays of parsley, with 12 peppercorns.
Let the soup cook for half an hour, then
strain it through n pnreo sieve, pressing
through all tho asparagus that will pass
through. I'ut tho soup over tlio' flro
again, add u cup of rich milk or cream
and let it boil up ngaiu. Add tho as
paragus tips, which have been cooked
for ten minutes in salted boiliim water
aud drained, and serve.
