Over tho great silver heaters, with
their doublo power alcohol lamps In
tho very smart houses the family chef
or a caterer's man brought in for tho
occasion presides. From top to too ho
is arrayed liko a lily, and ho probably
speaks very brokau English.
If a couple of doublo chafing dishes,
which supply in nil four cooking buHius,
aro used, two men can rapidly feed al
most any number of persons, and a de
lightful informality reigns. All about
tho cooks aro bowls heaped with raw
materials for conversion into dainty
messes. Every utensil used in preparing
the supper is silver, aud ovcry guest,
selecting what plates, knives, spoons,
etc., ho or sho desires from piles on a
sido tublc, goes personally for helpings
from the chuflng dishes.
On tho brown or white wicker plates
tho bread is piled and topped by a silver
wiro fork, which holds a card. Ou tho
card, in legiblo gilt letters, is written
"ham, chicken, salad or jolly sand

maid posses by thoaowho are hungry

loug as supper is in progress theso bas
kets of bread aro kept circulating
through tho rooms, aud tho ices aro
dished up in the prettiest littlo paste
board boxes. Inside tho boxes aro lined
with waxed paper, and it is a fact to bo

or novcr used now at such suppers.
How IliiMlan Caviare Is Made.
Caviaro is a very important' product
in Russia, tho most of it coming from
tho sturgeon. The roo is taken out of
tho fish and rubbed on a sieve to rcmovo
tho skin, tho meshes being largo cuough
to allow tho eggs to pass through, leav
ing tho skin behind. Tho caviaro is then
covered with brine. Tho difference be
tween tho fresh caviaro aud tho ordinary
kind put up for export is in tho length
of tiiuo it remains in tho brino. After it
is removed and drained it is put up in
cons, jars and small kegs and is ready
for market. Tho cheaper kind is put in
to linen bags and pressed. This is called
pressed caviaro and 1b a much inferior
