divo. Shell cold, well cooked eggs, cut
in halves and ruiuovo tho yolks. Pound
tho yolks to a pasto with nu equal
mnount of tho llcsh of lobster, shrimp,
anchovies or salmon. With this pasto
well seasoned fill tho cups fashioned
from tho whites of tho eggs nnd arrango
them around tho tomatoes. Strew souio

tho endive. Mix cnual portions of oil
and vinegar, season with salt and pcp-1

hot water until tho mixturo thickens
slightly. When cold, cut tho leaves of
a head of lettuco ncross tho grain into
