out eggs or thickening of flour" of nny
kind may bo tnado of n quart of rich
cream, 0110 cup of milk, 0110 large table
spoonful of gelatin, nno liberal cup of
sugar and n tnblecpooufnl of vnuilla
Soak tho gelatin in four tablespoonfult
of cold water for two hours. Uriug the
milk to tho boiling point nnd stir the
gelatin into tho boiling milk, and con
titimi stirring until It is melted. Strain
the preparation through a fluo wire
strainer into the cream, add the vanilla
and tho sugar and freeze tho mixture at

be mado of a quart of cream, n pint of
milk, a large tablcspooufnl of gelatin,
a cup and a half of sugar, two ounces
of unsweetened chocolate scraped fine,
and a tablcspooufnl ut vanilla oytraut
Soak tho gelatin ns before, stir It into
a cup of tho milk and strain it intothe
crcntn. Stir thu scraped chocolate into
the remainder of thu milk, which mut
also bo heated to tho boiling point; stir
thu preparation of chocolate- over tho
(ho until tho chocolato is all molted
And tho wholo is n smooth, dark muss.
Add the sugar and stir nil into tho
cream. Add tho vnnill.i and frcozo care

Tho ice should bo pounded fluo, nnd tho
freezer should bo packed firmly ITso 1111

tho cream is trozen too rapidly, it will
bo coal bo. After packing tho freezer
turn tho crunk for llvo minutes. Then
open tlio freezer, rcmovo tho beator nud
scrapo olf with n thin bladcd knifo tho
frozen crust of thin cream that covers
tho sides of tho can and mix it thor
oughly with a wooilcn spoon or spatula,
with tho boftcr cruam in tho center

can nnd turn tho crank again for three
or tour minutes, then repeat tho opera
tion of scraping tho sides of thu freez
ing can and mixing tho unfrozen cream
with the frozen. Work tho cream thor
oughly to mnko it light, cover thu can
and turn the crank again, now as rapid
ly ns possible. In 11 few moments the
cream should be ready to pack. It should
remain packed in halt and ico fornt least
two hours. It is better if kept four or
oven six hours before, it is eaten.
