On Saturday afternoon the offices and
buildings of the Honolulu Brcwlngtinlt
Malting Co. 'were thrown open to the
general public. In response to the In
vltatlon of President Hocking a large
crowd of citizens assembled at the
brewery, some attracted by curiosity
and n desire for knowledge and others
actuated by a laudable desire to sam
ple the product as experts. It Is need
less to say that both thirsts for knowl
edge were will satisfied.
The lager Is over four months In age
and possesses a most agreeable flavor.
For enrs, the Idea of local manufac
ture of beer has been viewed by tho
wise ones of Honolulu with pitying
certainty ns to Its Impracticability.
The arguments adduced wero tho re
quired Importation of all tho Ingre
dients except water. It was also whis
pered by tho knowing that even If
such Importation stood not In tho way,
yet tho wnter Itself was unadapted to
tho manufacture of beer. Despite these

storage and hero also Is an apartment

beer Is an Imposing structure of four
stories of handsome design and thor
oughly fireproof; II. Stelnmann of New
York, architect, nnd Victor Hoffman,
contractor: Tho machinery through
out has been Installed by specialists
direct from the factories. Tho equip
ment Is first class and up to date and
exemplifies the most modern achieve
ment and the highest scientific knowl
edge of Uie tlmei. There Is not a brew,
cry of Its size In the world more thor
oughly adapted to tho uses designed.
Thero have been no mistakes In details
and no cost has been spared to make
tho plant like the beer, "Prlmo."
Tho brewer In chargo of this vast en
terprise Is E. J. Waterman who brings
to the discharge ot his dutlfs qualifi
cations of the highest order. He Is a
graduate of the American Brewing
Academy and supplements a theoretical
familiarity with chemistry and the de
tails of beer manufacture with a Ufa
long practical experience which places
him easily In the front rank of brew
ers. Everything has been placed and
arranged under his skillful supervision.
He has not been content to assume
charge of a plant after It was ready
merely, but has devoted nearly two
years to the task of making a model
bjbwery, taking full advantage of his
acquaintance with first class breweries
In the United States, discarding any
errors they may have made, rejecting
anything of a problematic or experi
mental nature and satisfying himself
with only what would bear the test of
use. Hence cery detail looking to con'
venlence and success has been ably
provided for. It was the good fortune
of tho Bulletin representative to bo
shown about the works by this very
agreeable ou,ig man who answered
nil questions, foolish and otherwtsa
with a patience truly marvelous.
Tho company .'provides for Its own
lights and sewerage. The water comes
from an artesian well, 850 feet In depth,
being similar analytically to tho water
of the Kawalahao well.
Tho manufacture of beer, when you
know how It Is done, Is very simple,

to start an opposition brewery of equal
merit, a brief explanation Is submitted.
On the fourth IlooMs a storage room
for common and chevalier barley. The
malted article Is first dumped Into n
caalt, hopper from which ft runa
through a cleaning reel to next floor.
Wind and motion separate chaff and
dirt and the barley returns to the upper
floor again to go through'a mill whero
lit Is ground. It Is then taken up In a
bucket elevator to the scale hopper to
bo weighed. After which It runs Into
a mush tun and Is mixed with water to
extract the malt. Tho liquid malt
reaches tho kettle boiler where the
proper amount of hops Is added while
boiling. Its next destination Is the hop
jack. Tho hop jack has a false bot
tom with perfotatlons 1-32 of nn Inch.
Tho liquid-soaps through these perfor
ations, leaving the hops behind. The
liquid continues Us Interesting journey
through n Dcckobach water and am
monia cooler, which is tho latest and
beet appliance known. After a brief
rest in tho beer cellar it Is pumped to
the fermenting cellar on the third floor,
from whence by graWty It descends to
tho second door. A storago of (our
months then, ensues and It Is then
ready (or Its advent Into 'the chip cel
lar. Here It is refined and given llfo
by the Infusion of say ten, or twelve per
cent of 1 fresh beer. It Is then pumped
through a liquid carbonic acid gaa
cooler from which It lands through a
Otter Into containers ready (or salt.
As the beer Is of only 3 ',4 per cent
alcoholic strength and Is unfortified
by deleterious chemicals that accom
pany many If not all of tho Imported
beers, It Is easy to predict a ready and
growing sale (or tho product. We have
a beer produced from all of the best
and with none of the worst Ingredients,
by methods of the very highest order
and supervised by a man of the highest
capacity. , It Is an .nrtlclo that defies
criticism 'and laughs at boards of
health. Mr. Hocking and the enterpris
ing gentlemen associated with htm In
this undertaking deserve tho warmest
congratulations and the most liberal
patronage. The output Is 1000 barrels
per month. May the sales be ditto.
BUTTE CITY MOVING.

sliding movement ot the city of Butte.

for several years has again manifested
itself by five large cracks In the earth
In different sections at-the city. The
largest crevice occurs on West Galena
street where a crack twelve Inches wide
and of considerable length and depth
has appeared. Three of the openings
were on the west side of the town and
two on the east side. There Is no cav
ing, but a distinct parting ot tho earth,

much trouble on account of the strange
movement which frequently breaks
