On the Problem of What to Eat
Oooil sauces nro not as difficult to
piake ns Is bo generally believed. The
failure to (succeed In this particular
branch of tho culinary art lies In the
tact that the average cook does not,
first of all, understand the Important
part they play In the preparation of
foods, and does not give sufficient tlrao
and study to the manner of making
Illut tells us that there Is no good
cooking without good sauces, nnd It Is
undeniable that many otherwise excel
lent dishes are ruined by being served
with a poor sauce.
Good sauces cannot be made from
poor materials, though It Is not neces
sary that the substances used bo ex
pensive, but they must be suitable. The
American cook will spend more for ma
terials In the making of her sauces for
ono meal than would furnish a French,
German or Snnnlsli cook with sumilles
for a dozen sauces. The foreign cooki
would not attempt to substitute water
for broth, or vinegar nnd water for
wine, as does the American cook, and
yet they can produce the most delicious
sauces nt half the cost. Ono u antes
from not knowing how, while the other
can afford the better, richer materials,
nccnuso they waste nothing good
through carelessness nnd Ignorance.

Why not? Havlug admitted that

hands of n careless or untrained cook Is
quite as dangerous to good digestion

preparation. Hut from the hands of

than Interfere with the assimilation of
our food. A noted lover of good living
so highly nlued the skill of the cook In
the preparation of his sauces he deem,
cd him worthy of knighthood, and ex
pressed his approval tn such wise:
"An exquisite and poignant sauce.
For which I'll say unto my cook,
Go forth and be a knight,"
THE OltlGIN OF OIJH SAUCES.
While Americans arc cosmopolitan In
their sauces, and have, fiom the abund
ant supplies of nature, originated many
dainty nnd delicious which arc un
known nbroad, they have derived tho
original Idea of most of their finest
sauces from the French. Hut what few
American rooks understand Is. that tho
French, who excel In variety of ex
quisite sauces, have really but two
original sauces fpr meats and vege
tables. With these foundation sauces,
they use skill, cultivated taste and
originality In playing the many varia
tions with these two keys.
The espagnole, or brown sauce, nnd
tho white sauces are, as the French ex
press It, the "mother of sauces."
Understanding how to make these
two In perfection, you can ring any
number of changes, as they can bo
made to suit the taste nnd accord with
the dishes they are to be served with,
A hundred varieties can bmndc just
ns well us one, by adding or leaving
out ono or more subrtnuces, or by
adopting a little different mode ot prep
aration. FRENCH NAMES FOll AMERICAN
So much Importance have the French
always nttached to their sauces that

for the American kitchens, wc must of
necessity retain these names In many

appropriate, as tho name does not sig
nify the nature ot the sauce, but the

flaiorlngs are a matter of taste; but

the flavor of "some subtleties" that are

While there Is a considerable license,
jet a strict regard must be paid to
suitable combinations that will not bo
out of tune with the meats, vegetables
or articles of food with which you In
tend serving the sauce.
Mushroom sauce, or powder, Is a de
lightful addition to many sauces, and
also n dash of curry.
Mushroom, walnut or tomato catsuw,
a few chopped oysters, lemon Juice,
paprika, chopped gherkins, pickled
walnuts or green peppers go nicely In
a sauce to accompany beef or veal.
Pickled walnuts are also considered
suitable for brown sauce for pork
chops, and boiled mutton needs tho
piquancy of caper sauce. Horseradish,
cucumber and onion sauces are three
favorite meat sauces, cither hot or cold.
SOME THINGS TO REMEMHER
Do not use a straight bread flour for
sauces. Havo the butter bubbling hot
when the flour goes In, but not colored,
unless you are making a brown sauce.
Cook both well together before adding
the milk. This prevents tho sauco from
having a raw, pasty taste.
It Is necessary to stir all sauces con
tinually whllethey arc cooking until
they begin to thicken and the starch Is
sufficiently cooked to remain In suspen
sion and not fall to the bottom of the

it Into tho liquid, or It will not combine,
with the butter, which will float on tho
top. Add the salt when the sauce be
gins to thicken. Do not be extravagant

PLAIN WHITE SAUCE.
Measure all your materials before
you begin cooking. Put two level tea
spoonfuls of sifted flour, use paent or
pastry, and one cup of warm but not
boiling white stock or broth; water can
be used If the sauce Is for vegetables;
but broth Is best, as the former malx-s
a rather pasty sauce. Melt the butter
and let It get bubbling hot, but not the
least colored. Add the flour nnd then
stir rapidly while It cooks a few min
utes. Then add the broth and stir con
stantly, but not rapid, until it begins
to thicken j add half a teaspoonful of
salt and two dashes, six shakes of
white pepper. Let It toll up for a lav
minutes and It Is ready to serve.
For a cream sauce, use milk Instead
of broth or half a cup of cream and
half a cup of broth or stock, and pro
ceed In same way as with white sauce.
' BROWN SAUCE.
The formula for this Is same ns for
white stock, except that you brown the
butter nnd fat .then add the Hour nnd
brown, or ue browned flour, using a
little more flour In a brown sauce as
the browning destroys, In n measure,
the thickening power of the flour,
