boiled potatoes cut In slices about

and pepper. Cook to tnsto until po

stand until potatoes are nicely
browned underneath : fold over, turn
out on n hut platter and sprinkle
with finely cut parsley.

smooth. Add seasoning of salt nnd
whlto pepper, also butter and cream.

become whlto and creamy. Pllo tho

Lightly brush the potnloes with melt
ed butter and place In a hot oven for
n couplo of minutes to brown before
serving. When mashing potatoes use
hot milk, and If you have been In tho

toes (old potatoes that havo been
peeled and toaked In cold water do

a cupful nnd a half of milk, and tho
last thing after all these Ingredients
are thoroughly mixed, add the
whites of tho eggs that have been
beaten to a stilt froth. Ituttcr well

mixture, and bako In a hot oven
nbouty twenty-five minutes. Turn
Into a hot dish. This sanio potato

fowl or sweetbreads. Tho same mix
