Dissolve two tabletpoonfuls of corn llour, or flour. In a llttlo cold milk, and add to It hot stir well ond sweeten to tnsto. Squeeze In a few drops of lemon Juice; when the mixture has thickened, re move It from' the fire, allow It to cool, and add two eggs well bentcn. Pour into a pudding dish, scatter flno bread crumbs over the top, with a fow bits of butter, and bake till tho nustard Is rot Leeds Mercury. Stuffed Kggs. These may bo heated la tho orn and dressed with melted butter or served cold. N Y. Ledger. Mlnuto Pudding. One pint of flour, a tcaspoonful each of soils nnd salt, a scant quart of milk. Mix tho soda and salt with the flour, turu tho milk into a buttered spider, nnd tho Instant It bolls up add all tho flour at once. Toss It up quickly till tho flour Is well mixed, turn it Into a buttered bowl, cover close, and let It stand a few min utes to shape. Turn out on a hot plat tor, and serve at oneo with wine or lomon sauce. This Is an old-fashioned receipt, and has been used In my fam ily for many years with great success. IJooton llodgot Spanish Cream Pudding. Take ono-thlrd of a box of gelatine, one quart of milk, four eggs, one and a half cups of sugar, a tcaspoonful of vanilla and a pinch of salt. Soak the gelatine on hour In milk. Heat tho yolks of tho eggs and tho sugar to gether, add to the milk and pour Into the chafing dish. Cook twenty min utes, take oft and add the whites of the eggs which have been beaten to a stiff frothi after It has cooled a little add the vanilla and salt, and beat Ave minutes. Pour Into a mold and set on the loo. Fanner's Voice, This makes two largo cakes. White part: Two and one-half cup sugar, one-half cup butter, ono cup sweet milk, three cups flour, whites of eight eggs, one and one-half teaspoons bak ing powder, flavor with extruct of lemon. Yellow part: The yolks of eight eggs, two cups sugar, one cup butter, one cup sweet milk, three and one-half cups flour, two teaspoons bak ing powder, llrotvn part: Tuke one half of yellow mixture and two-thirds of a teacup ut grated chocolate. 1 steam the chocolate Instead of grating it by putting It on a dish over a tea kettle of hot witter. Hod part: Whites of four eggs, one eup of red sugar, one half cup sweet milk, ono und one-half cups flour, two small teaspoons baking powder, flavor with extract of vanilla. They aro Christian ized and have a patron saint, St. Gc ronlmo (St Jeromo). The Pueblo vil lage Is on both sidos of n creek that flows down from the Sanre Do Christc range and joins tho Rio Grando several miles below Taos village. This creek supplies water to irrigate their lands, and as It Is a never falling source, their crops aro always abundant There Is a pueblo on either sldo of the creek, and a friendly spirit of rivalry exists be tween the occupants of the two. These pueblos each contain a population oi four hundred or tiro hundred Indians. They aro built of adobe, several stories high and divided Into houses for fami lies. They have an Imago of their patron saint, nnd tho custody of this Image Is supposed to bring with it a train f special blessings to that pueblo where It Is housed. :to choice of tho council and the custod of the Imago are determined by a foot race on St Jerome day, Scptemler JO, and the vic torious pueblo has undisputed posses sion of the ofllces and the image until the next 30th of September. About thirty contestants from each' pueblo are chosen for the race, which Is run over a course of one-eighth of a mile over the public road.
