Hot Scotch Itolls.
Scald one cup of oatmeal flakes with
half a cup of boiling milk. When cold add
half a teaspoonful salt, third of a cup of
molasses, one lcvef tablespoonfnl butter
and beat Ave minutes. Thicken with
white bread flour, same as for ordinary
bread, leaving the dough rather soft. Let
rise overnight, and in the morning mold
Into small rolls: let rise until very light;
glaze with white of egg or a little mile
and bake in a moderately hot oven for
a half to three-quarters of an hour .
Pare, core, and stew four large or aix
small tart apples. Rub through a sieve
and beat smooth while hot. adding a
tablespoonful of butter and little grated
nutmeg. Separate four eggs and whip
yolks and whites very light. Add these
to tho apples when they are quite cold,
yolks first. JHavor with a teaspoonful
of vanilla or rose water. Last of all. fold
in the beaten whites stirring in the lat
ter with a few lft strokes. Pour all
Into a deep pudding dish well buttered
and heated. Bake In a moderate oven to
a delicate brown. This Is delicious.
Have the eggs boiled for at least hilt
an hour. Roll fine four hard crackers.
Make a dressing with one tablespoonful
butter, one tablespoonful mustard, celery
seed and salt to taste, and hair a cup of
vinegar. Separate the eggs and ch-p
One. Pour the sauce over them and add
the crackers mixed with little grated
cheese and paprika. Serve on lettuce.
Take one large cup of prunes, fine
apricots, or prunellas and cook tender;
remove the pltv return to the pan; add
half a cup of sugar and cook to a pulp.
Remove as much of tbe skin as possi
ble, and when quite cool add the beaten
whites of tno eggs and beat rapidly for
ten minutes. Heap In glasses and serve
with a vanilla custard made Or the yolks
of the eggs, one pint of milk, and two
tableapoonfuls of sugar. If you wish
to use the whites for another purpose,
whipped cream may be served or the
custard alone Is quite sufficient for a
One quart of flour, two teaspoontuts
baking powder, half a teaspoonful salt,
half a cup of butter, and half a pint
of sweet mlULr Roll out half of this half
an inch thick; place in a dripping pan;

oranges and add enough sugar to make
very sweet. Place these between ths
cake as soon as It Is taken from the
oven and serve at once.
Cora Caramel Soap.
To three pints of stock or good broth
add half a cup of eornmeal. well browned
In the oven, half a cup of canned corn and
let corn come slowly to boiling point and
boil five minutes. Season with salt and
pepper and serve.
Vermicelli Chicken. '
Cook half a pound of vermicelli In salt
ed water and drain thoroughly. Pour
ov er It half a cup of highly seasoned to
mato sauce. Shred the white and dark
meat of a small cooked chicken Into fibers
no larger than a match; shred four sticks
of celery; mince a Bermuda onion: sea
son with salt, white pepper and red. and
a dash of ginger, cloves, and cinnamon.
Put all In a well-greased pan saute over
the fire During tho final heating ths
various Ingredient should be thoroughly
mingled. When they are let them cook
for a minute or so until the vermicelli
touching tho sides of the saute pan are
moderately brown. Serve plain with half
a cup of stock heated and poured ov er it.
Soak quarter of a pound of macaroons
In & scant pint of milk. Beat four eggs
with a small half cup of sugar. Mix and
beat all until smooth: then add the juice
of two oranges and grated rind of one.
Pour in a buttered pudding dish or mold
and boll for an hour or steam for one
and one-half hoursT

Beat to a cream half a cup of butter
and gradually beat Into It one cup of
sugar, beason with any flavoring pre
ferred When it Is smooth and creamy
pile it roughly on a pretty dish, set in a
cold place, and before serving grate a
little nutmeg over the top.

Boil and mash In the usual way. hav
ing the squash drained very dry., While
hot beat In two tablespoons butter., two
of good cream; salt, and ppper to taste.
Then stir and beat In the beaten -egg to
make a batter and pour Into small !n-
dividual cups or ramekins and set in a
pan of hot water. Place In the oven and
