Sweetbreads Salad Wash
sweetbreads thoroughly and put
in cold water for an hour. Boil
in salted water for an hour and
then drop in cold water to harden.
Mince and add equal quantities
of minced celery, and one-half as
much of chopped nuts. Add a lit
tle whipped cream to mayonnaise
and moisten the salad. Serve on
Layer Cake One cup sugar, l2
cup butter, whites of three eggs,
1 and y2 cups flour sifted with one
teaspoon, baking powder, 1 tea
spoonful vanilla, l2 cup milk.
Bake in three layers and use the
following filling: y2 cup Sugar,
beaten yolks of three eggs, one
small tablespoon butter, and the
juice and grated rind of one
orange. Beat all together and
cook in double boiler until con
sistency of jelly. When cool
spread on two of the layers and
frost or sprinkle powdered sugar
over the top layer.
