Take one pound of cold boiled
fish, break it into flakes, mix one
teaspoonful of chopped parsley,
one teacupful of breadcrumbs,
salt and pepper. Make half a pint
bf good white sauce and pour it
over the fish, etc. Mix well, and
when cold form it into small
cakes and fry them in boiling fat.
These cakes are nicer dipped in
freaten egg and breadcrumbs, "but
they are more economical without.
