Select one-half peck of young
beets no larger than a walnut, using
tops as well as roots. Wash thor

them into boiled salted water and

fine, add one generous tablespoon of
butter, a tablespoon of lemon juice
and a dash of pepper. Arrange
greens on shallow platter or dish. Cut
the beets into halves and arrange
