SWEET POTATOES
Sweet potatoes are vastly differ
ent.from white potatoes.
They are harder to digest and lack
nutrition; contain less starch and
more sugar and are much harder to
prepare properly. If the skin is brok
en when boiling they absorb much
water and are soggy and moist. If
they are of good size and are baked
in the skins, there is nothing better
for a simple dinner if served with
beeksteak.
