t OPEN JAR PICKLES
Soak cucumbers in a weak brine
made of 2 cups of coarse salt and
1 gallon of water. Take 1 gallon of
the best cider vinegar, add 2 cups of
brown sugar, 2 ounces of mustard
seed, 2 ounces of ground mustard, 1
tablespoonful of celery seed, 1 ounce
of ginger root, chopped or broken,
and 1 cupful of salt Stir until thor
oughly mixed and then turn into a
crock.
Wipe the pickles after taking from
the weak brine and drop them Into
the prepared vinegar. Keep the top
of the crock covered with a cloth.
Stir thepickles every two days. Keep
in a cool place.
