USES OF BEANS
While beans are a valuable food,
there are certain limits beyond which
they can not be used-to advantage in
the dietary.
Beans are suitable for persons en
gaged in active outdoor work.
However, beans, when properly
cooked, need not be excluded from,
the dietary of those of sedentary-habits,
though they should not form as
large a part of the ration as in the
case of active workingmen.
In preparing beans for the table,
soda is often employed to soften the
skins so they can be readily, removed
