Adding sweets only increases the evil.
Even skimmed milk, which,, contains
a large amount of protein, is better
than a stick of candy for a starch
Lenten Menu For One Day.
BREAKFAST Baked prunes" oat
meal and milk or cream, buttered
toast and coffee.
LUNCHEON Potato chowder and
fried bread, orange and lettuce salad,
DINNER Turkish pilaff, hashed
turnips, bean croquettes with cheese
sauce, jellied apples.
Put iy cup sliced potatoes to boil
in 1 pint "of boiling water and add 1
sliced onion. When tender, rub y2
of the potatoes through a colander,
then mix with the other half. Add 2
cups of milk and- season with salt,
pepper and butter. This should make
1 quart of chowder. Codfish, salt
pork and crackers may be added for
a more nutritious meal.
To 1 cup of soup stock add 1 cup
boiled rice and cup of strained to
matoes. Stir in 3 tablespoons but
ter and simmer 10 minutes.
Chop boiled turnips, but do not let
them get mushy. To 3 cups of tur
nips, add 1 teaspoon of salt, 1 table
spoon of butter and 4 tablespoons of
water or meat gravy, and season with
pepper. Cook until the turnips have
absorbed all of the seasonings.
