The Farm and Garden. Hints for Farmers, Suited to the Season. Feom that excellent publication for farmers, stock raisers, gardners, and all others engaged in agricultural pursuits the American Agriculturist for the cur rent month, we compile the following kints and suggestions applicable to the present season : CARE OF SHEEP. Sheep are now and are likely to be one of the most profitable kinds of stock. Give them all needful attention in shelter and food. "WTien kept at an open stack or exposed to storms, they eat more, (to keep out the cold,) but thrive less, and suffer more from influenza or colds, man Ifcsted by running at the nose. BARNS AND STABLES. v Stop the rain leaks in the roof, and the cold air leaks around the stalls. That great crack under the door lets in cold, and the horse or cow must have more fuel (food) for the fire within the body, to counteract the cold draft with out. Pure air is essential, but let it not come in chilling blasts upon man or beast. "With ventilators above for the escape of bad air, there will generally be enough good air stealing in almost incessantly -through seems and crevices; if not, ad Biit it from some point where it will not blow directly upon any human or other animal. Liirht is also essential to ani mals. KEEPING VEGETABLES. ; Just above freezing is the best cellar temperature for all things to be kept therein, except sweet potatoes, which need to be in the warmest part, but not in a hot plaee. Common potatoes endure rather more heat than apples and other fruits. These must be kept cool. For potatoes, warmth with moisture is injuri ous, next to actual freezing. Dryness, and a cool but not freezing atmosphere, in the cellar or earth-covcrcd heap, are essential. 'If in out-door heaps, dig a deep trench around them, with an out 'let, so as to keep the bottom of the heap -always dry. Add more earth to the "heap only as' needed by the increasing cold, always making the outside smooth. eo as to shed rain. CARE OF POULTRY. t'- The secret of having eggs all winter is simply to give the hens the advantage of summeri viz : wann shelter, light, water, 'and some animal food, to supply the ab sence of insects, ' which they gather in rammer, with lime enough to form egg shells. ' The bones and scraps of fresh .tneat they devour greedily and convert them into eggs. Give them also the cab ibare leaves, notatoe parings and other refuse vegetables. CARE OF TOOLS. The thrifty man will not only know .where they are, but see that they are never exposed to rusting and rotting by dews end rains. As a rule, tools are de preciated more by exposure than wear. " Ilave a place for everything, and every thing in its place." Corn and Hogs. .Fkoh carefully conducted experiments by different persons, it has been ascer tained that one bushel of corn will make 'a little over 10J pounds of pork, gross. , Taking the result as a basis, the follow ing deductions are made which all our farmers would do well to lay by for a con "vcuient reference. That, ' Wlien corn costs 12 cents per bushel, pork costs 1 cents per pound. , . , When corn costs 16 cents per bushel, pork costs 2 cents per pound. When corn costs 25 cents per bushel, ' pork costs 3 cents per pound. When corn costs 33 cents per bushel, pork costs 4 cents per pound. Whe'n corn costs 30 cents per bushel, pork costs 5 cents per pound. The following statements show what the farmer realizes in his corn when sold : in the form of pork. . When pork sells for 3 cents per pound, it brings 25 cents per bushel in corn. ; - When pork sells for 4 cents per pound, it brings 33 cents per bushel in corn. .; When pork sells for 5 cents per pound, it blinds 50 cents per bushel in corn. iv . J . Express, . ' Quince Puddino. Take six large ripe ' quinces ; pare them, and cut out all blem ishes. ' Then scrape them to a pulp, and mix the pulp with half a pint of cream, - and half a pound of powdered sugar, stir . ring them together very hard. Beat the yolks of seven eggs, and the white of two, 'and stir them gradually into the mixture, adding two wine-glasses of rose-water. Stir the whole well together, and bake it in a buttered dish three-quarters of an Lour. Grate 6ua;ar over it when cold. Tapioca Pudding. One quart of cold . water ; six tabiespoonfuls of tapioca ; set " on the fire and stir till it boils; then add one ounce and a half of white sugar in a powder. Again set it on the fire for a , quarter of an hour, stirring it occasion ally; .take it off, pour it into a basin, and stir in immediately one ounce of fresh ; butter and three eggs well beaten first ; pour it into a buttered fire-dish, and bake gently one hour, or it may be boiled one hour and a half in a mould, adding two more eggs. In either case, let the tapi oca be prepared early. To be cold before it is baked or boiled, it must stand a quar ter of an hour before you turn out.
