Under tbl lyitem the animal are kept in boxes or cages while conttoed in the hole, and are hoisted on deck lor exercise and air whenever the state of the weather may permit ef it. Uy this means cattle have frequently of late been carried across the Atlantic with little or no perceptible deterioration of the condition in which they were shipped in America. But it must be born in mind tbat this improved mode of convey in cattle across the sea in volves great additional cost of freight; and futhermore, during adverse weatber the Improved system become impracticable, end the old dangers and dUadvantige re turn. For some year past the exportation of butcher' meat in it fresh state from America into the British Iilex.wai.lrequent ly attempted, but witb very uncertain eue eas. The plan adopted for the preservation of the meat in a sound and sweet condition If the speedy withdrawal of the animal heat immediately on the extinction of life. This is accomplished by a refrig erating proceu at the temperature of 88 to 40 deg, Fahrenheit. Alter which, and as speedily ae possible, the meat Is sewed up in canvas wrapper of open texture, and transferred to air-tight chambers (con structed in a manner also non-conducting of heat) In the ship in which It Is to be conveyed across the ocean. The condition of the meat is excellent, very far surpas sing that generally produced in Britain at the present 'day. Prejudices against It have been overcome.
