It takes a very small quantity of water to thin the potatoes, for the •ponge will be watery if too thin, when it is light add 1 1-2 pints of new milk, 3-4 of a pound of butter, and sufficient flour to make a stiff batter, let them rise again. When risen put in 1 1-2 pounds of white snsar, free of lumps, break 3 eggs in, 1 grat ed nutmeg, 1 tea-spoonful of cinnamon, and enough dough to make it as stiff as bread. When light, roll thin and fry in hot lard. In rising dough-nuts should .never be hurried he first sponge should be set in the morning, and some time during next morning they will bo reedy to try. Rhode Island Brown Bread.—One quart Indian meal, one pint ryo flour, a small cup of molasses, one tea-spoon ful each of saleratos and salt with hot water make thin enough to pour bako three hours. Bice Pudding.—Wash thoroughly a tea-cupful of best rice, add half a cup of white sugar, a quart of water and tho same of milk. Bake slowly too hours. A cup of raisins is an improve mant.
