A writer in the ifassaehn- Reus iroiignman 'ten now to umKe healthy bread of flour and water and a , little salt, and no yeast, saleratus, cream of tartar, or any sneh vile soap "makinjj AtnfF. She says: "Take as much milk-warm water as you will want to make your batch of bread, and salt it about twice as salt as yon would if you were going to mix the same quantity into saleralns bread. Stir in flonr enough to make a paste about as thick as gridle-c tk donVh. Put ths paste into a tin pail, and set the pail into a pot of warm water on the stone hearth, where the water in the pot will keep about milk-warm, all the time.' This will c;ive the paste an even ten -perature. . - In four or five hours the paste will raise and foam like yeast. Then turn it into your mixi'i -t in, and m'x in flour enough to make your dough for breed, and mould it into your pans ready for baking, set the pans in a warm place, under or about the stove, and cover them with a rlan cloth or. pa per, and let it rise, it will t:ike about two hours, and. as soon as it is fairly raised, put it into a hot oven and bake it quick and thoro'i'hly. ' Yon will have the lightest, whitest and sweetest bread that can be made, and bread that is healthy and will re tain the nfltural 'taste of a handful of wheat when chewed in tin mouth, and is not spoiled hv salcratus. cream of tartar, yeast, powder, and such like drugs. Tf yon do not put the salt into the water, you will fail to gt-t a good rise about nine times out of ten, but follow the directions and yon will seldom fail. ".If people would eat this kind of bread, we would not hear so much com plaint of Hour stomach, headache and .dyspepsia." Salt for 5Iii.cn Cows. Without the use of salt, the milk becomes scanty and imperfect. The greatest necessi ty for its use is in the spring, when the cows are first tnrned out to grass.' A few experiments in May' and June showed that going without salt five days shrunk the milk from one to two per cent, in quantity, and from five to seven per cent, in quality. Later in the season, less ditferance wa&obscrva ble. " . Food for Horses. Variety is an essential. Oats are not the only food that will fit a horse for labor or the road. KtKits are oftentimes much su perior. Of these, carrots are the best, and keep the horse sleek and in good health. Heavy horses,' while fed on ent conv stalks, together with a little corn and cob meal, will not show any j rap too s of this disease. .
