It Turns Out Counterfeits That I
Would Deceive an Old Hell

Recently the provision dealers in Pat I
I erfioii New Jersey have had many com1
plaints about eggs One dealer Had an I
alleged farmer arrested and fined for sell I
ing ancient eggs that had been treated in i
some way so as to look like fresh eggs I
Another tried some eggs and found that I
the shells were made of plaster of Paris
and the interior of a chemical mixture
Several provision dealers say there is a
factory in New York for manufacturing
artificial eggs hut others say the eggs

The Tribune tells of a scene in a back I
room on Broadway in which a curious J r
invention was shown to provision dealers
and merchants It says the invention
consists of a number of artificial eggs
which resemble the real article so exactly
that none but an expert could distinguish
them The shells were made of a clear
transparent oraposition and the shape
was perfectly modeled The portion
sur
rounding the yolk was made of albumen
and the yolk itself of ground carrots and
saffron Three oi
these artificial
eggs
were placed on a platter by the exhibitor
with half a dozen real ones and the men
present were told to select the bogus ones
from the collection
When each had tried and failed the ex I
hibitor said
Now gentlemen you can
test them in another way A fryingpan I
was then placed on the stove and in a few
minutes it began to simmer Two artifi
cial eggs werepicked their shells broken
and their contents dropped into the hot
pan where they soon began to simmer I
ana splutter A little salt and pepper a
brisk two minutes stirring with a fork
and as fine dish of
a scrambled eggs as
could be prepared at a restaurant was
placed before the expectant guests
Help yourselves gentlemen they are
as good as the real article Nothing dis I
agreeable or poisonous about them I
This invitation was complied with at
once and the several verdicts were de
licious Better than the real article
Whatare they made of They are
not artificial but fresh eggs from the
country Well gentlemen smilingly
responded exhibitor whether real
or artificial I can make any quantity of
those eggs at the cost of about half a cent
apiece while you cannot buy their equal
for less than two or three cents
