works. To encourago tbis new cuter-
priso the legislaturc of Kansas, at its
last session, voted a bountv of two cents
a pound on all sugar niade from sorgbuni
in tbo state, provided the bountysbould
not cxcecd 15,000 in a singlc ycar.

croft, Mieh., editor of the Grunye Vis
itor, Ilon. Thomas May, mastcr of tho'
Michigan stato grange, and K. I). Gay
of Manchester, X. II., we took tho
stcam slreet-cars, wbich run to (be city
limits, witliiu onc aud onc-balf miles of
tbe works. Ilere we took a teatn and
drovo by t.bc (ields on which is grown
much of tbe sorglutm uscd in inaking
tbo sugar. Tbo land lics along tho
Kansas rlver and produces an avcr-
ago of twolvo tons of sorgbuni per acro.
Arriving at tho works, we fouud Ilon.
W. L. Parkinson, tbo goncral nianager,
to wboni niore than to any otlier tbo
success of tho industry is due. Mr,
Parkinson kindly took us in charge and
cxplained the process of inaking sugar
from sorgbum. The cano is toppcd
tbo seed cut off and delivcred to the fac
tory by tbe farmers. They receivc two
dollars per ton for the cano and tbo satno
price for tbo seed. Tho averago yiold
of seed is about two tons per acro. The
seed is put in sniall buncbcs to dry and
then in largo stacks, whcro it is kept
until thresbcd. Tho seed not uscd for
planling is sold for fced, being as val
uablo for tbis purposo as corn. After
tbo caue is recoived at tbo faclory it is
run through a largo cutting-machino
aud cut in picccs about onc inch in
length. It is tbcn carricd to tbo fan
ning mills, whero tbeloaves andsbcatbs
aro soparatcd from tho chips. Tho
cbips then go to tho " maccrater,"
wbere they aro cut into (lno sbreds.
Tbis mass is tlion dumped into the
" diffusion batteries " and tho sugar is
"diffused," or soaked out, with bot
watcr and carbonato of lime. Tho use
of carbonato of lime neutralizcs tbo
acids and preventstbe sugar from lurn-
ing to glucose. I'rofessor Swenson
took out a patont on this discovery, but
tho doparlmont of agriculturo insti
luted legal procccdings to nullify tho
patont, on tho ground that wben tho
discovery was mado I'rofessor Swcnson
was in govornment employ. After tbo
sugar bas becncxtractcd from tbo cano
tho liquid, wbieb is vory swcet, is
passcd into a tauk, heated to tbe boil
ing point and sklmmcd. It then passcs
into six vacuum pans in succcssion and
is subjnctcd to tho boiling process
Tbo llrst pan is boiled by stcam; tbo
vapor from tbis pan is mado to boil tho
sccond, tho sccond tlic third, and so on
to tbo sixth, whicb rcquires a very low
degreo of heat. Tbo sugar has now
thickcucd to a syrup, wlileii is passcd
to tbo "strlkor," a vacuum bollor of
diffcrent construction. Tho " strlkor "
is about elght fcet In diamotcr and flvo
fcct dccp, and liolds about 20,000
poumls of sugar. Tho syrup is bollcd
by stcam, with a coilcd plpe insldo tbe
" 8trikcr." This process rcquires great
skill and judgment on tho part of the
oporator to dctorinino just wlion to
stop boiling, so as to produeo the grcat
cstamountof sugar oryslals. Aftor tbo
syrup has bccn brouglit to tbo dcsircd
point 11 is callcd " tnusli." Tho " musb"
Is dumped into iron vals, or " sugar
wagons," holding about six barrels
cacb. Thcso aro placed in a warin room
andloft atlcasltlireodays, during whicb
timendditioiial sugar crvstals will soiue-
times form. Tbo " niush " is tbcn
dumped into the centrlfugal maehines,
whoro the syrup is thrown off. Tbo
crystnllls'.cd sugar is tlu u takon out and
put in barrols rcatly for tuarkct. Tbis
faotory has manufaclurcd during tlio
prc8onl ycar 300,000 poumls of sugar
and 200,000 gallons of llno syrup. Tho
sugar is not in the rcflned state and is
worth six and one-balf cents per pouud
by tbe carload. Tho syrup is sold at
twcnty cents pergallon. Tbe coinpany
hopcs to bo ablo to increasc tbe amouut
of sugar mado from a givcn aniount of
cane. Tbis would oause a proportiou
ato decreaso iu tho amouut of syrup,
which is not so desirablo a product as
tho sugar. Tho Parkinson Sugar Coin
pany has implicit conlidcuco in tlio
futuro devolopmenl of tbis new indus
try and has dccidcd to cnlargo its
factorics at Topcka and Fort Scott aud
crect now works at Wichita, Kansas.

tbis industry, Mr. Parkinson said that

" If it werc reduccd the consunieis
would get but little if any boncfit from
the rcduction. For tho past four or
fivc ycars sugar, tho world ovcr, has
becn niade at a loss, ouly thrce or four
Gcrman factorics having paid any divi
dends during the past year." 15c tbis
as it may, tbero is undoubtcdly a grand
futuro for tbo sorgbum industry iu tbis
couutry, aud it is of tbe utmost impor-
tanco to somo parts of tho West whero
corn is not a suro crop on account of
drougbts and bot wiuds. As sorgbuni
cau be raised in nearly evcry state
in tbo Union, the extcnt to which
sugar-making from sorgbuni cau bo
carricd is practically unlimilcd. Mr.
Parkinson said be could not say at ju t
wbat cost sorgbuni sugar could be madc
but that Proftssor Collier's estimato of
one ccnt per pouud was mucb nearer
tbo truth than be formerlv sunnosed. It
is quitc possiblc that tbe development of
