A Good Cistern.
To make a cistern of forty
barrels, dig six and a half i'eet
in diameter and seven feet
deep. Wall with hard bricks
or bnl9, laid in good lime or
Band mortar. About SOO bricks
will lay the wall. One barrel
of the best cement will make n
cistern of sxty barrels. Mix
two-fifths cemeut and three
fifths clean, sharp sand (not
too fine), mix as you usso the
mortar, and not let it harden
until it is on tho wall. Apply
two coats with the trowel and
finish up with a whitewash
brush, using clear cement
about the consistency of brick
whitewash. This finish should
be put on immediately after
applying the last coat. Brush
dowu as smoothly as a stone
jar. Finisji the wall before
you put in the bottom, and be
careful not to crack the cement
in the bottom after the mortar
sets. Tlie workman should
thoroughly understand hi.s business.
Quail Pie.
Prepare pulT-paste as for
chicken pie, and cover the hot
toni of the baking pan with it.
Parboil the birds and cut them
through the back. Place them
in the pie, breast to back, skin
side down; sprinkle over them
sepper, salt, and adust of Hour,
and add for ten quarts, a cup
of melted butter; pour in as
much of the broth in which
the birds were boiled as it will
hold, and cover with a top
crust; cut a gash in the top
and bake in a brisk oven.
New Way of Cooking Meat.
The Boston Journal of
Chemi-tiy says a good way to
cook meat is to hermetically
seal it iu a vessel. Cooked
thus a long time in its own
juices, it is rendered very ten
der, and has a peculiarly appe
tizing flavor. Take an earthen
jar that will stand heat, with
tight fitting cover. If beef is
to be the dish for dinner, cut it
in convenient pieces, lay them
in the tar, rub each piec with
salt and a little lump of sugar,
and put it in a little water;
then lay on a piece of thick

If you think any steam will
escape, mix shorts of rye meal
with water to a paste, and
press strips of this all round
