The prinoipal eru of ehampaena are

which these wines are produced is, I need
not say expensive. The hectare (two and
one-half acres) in ths best situations costs
from 25,000 to 30,000 francs, ($0,000,) and

fixed at that sum, for the price of labor is
yearly increasing, owing to the scarcity of
hands. For this reason an effort is beins

In general the early ripening of the fruit is
an indicatloa of good quality in wine.
AS soon as the gr. pes are pressed the
wiue is placed in tuns containing about two

these it undergoes Its first fermentation.
After the frosts are over the wins is drawn
from below and charged to other tuns, in
order to free it from the deposit which
forms at the bottom of the veasel during
the fermentation. In the Spring, towards
the month of May, the wins is placed in
bottles. Ibis period of tbe year is chosen
for bottling because it precedes a fresh
fermentation which always takes place in
the wine, and which it is now desirable
should ooour in the bottles. The result of
this fermentation is to impart to the wins
its gaseous and foaming properties. The
saccharine matter contained in champagne
produoes the carbonio acid ,gai which
escapes In such an active form even long
after the bottle is uncorked. The expan
sive force of this ga determines in tbe
battles a certain amount of breaksge,
whioh vsrles according to tha temperature
of tbe plaoe in whioh the wine is kept and
ths quality of tbe glass. The more the air
circulating in these places becomes heated
the more tba gas becomes developed, and
banos tbs neoessity of those vast but well
vsntilatsd cellars which are cut in the chalk
of I ha ridge on which tbe vines grow.
Formerly ths bottles used in the cham
pagne distriot wore all brongbtfrom manu
factories in the north of France, but now
there are several local establishments oi
this kind whiob supply tbs greater portion
required. Tbe most preoi us quality of a
bottle is, I need scarcely say, its solidity
snd its power of restating the expansive ac
tion of the gas. Formerly the loss by
breaksge was enormous, frequently amounting
to five and twenty per cent of the
quantity of wine produced. It Is now,
however, controlled to a certain extent by
the use of an hj draulio press, under which
ths bottles are nuhjected to a pressure ot
from fifteen to eighteen atmopherea. Not
withstanding tbe facilities of testing tbe
quality ol tue glass onered by this auxiliary,
good bottles cannot always be procured,
lbs demand being often greater than the
snpply. Thus in ths cellars of tbe bonne

has been enormous. When people take
these facta into consideration they will not
be surprise! at tbe high prioes which all
good brands of wine bring in the United
btates.

turned downwards. As soon as tha wiue
becomes clear in this position the bottles
are stirred gently one day, and turned the
eighth ot the ciroumfereuoe of tbe bottle
the day following. A mark chalked on the
bottom of ths bottle serves to guide the
workman in this operation, which is a very
nioa one. liy a suooessivs series ot these
manoBuvrings, in the course of two or three
months all the deposit formed in tha wina
is gradually drawn down to the neck of the
bottle and settles on the oork. A skillful
workman can manipulate in this manner

is usually allowed.

these Messrs. Dent I & Oelderman, our
hosts, export from 300,000 to 400,000 bot

which they keep in their cellars is rarely
under l.SOO.OOQ bottles. Their wipes are
well known and highly appreciated all over
the Continent and in Houth America, but
are less so In the Unitod mates, where cer
tain brands keep possesion of the market
