Many of these soups are too com plicated for a mere American to pry cpare, for they call for too many things not easily crea obtainable; the following is au good exalmple : Russian Cab - E bages Soup.--Cut into small squares two neediuf sized onions and try them In two ounces of butter, add one and one-half pounds of sauer krautm, coarsely chopped and stew together until all moisture is extracted. Sprinkle with a tablespoonful of flour an dd three tablespoonfuls of sour cream. withx well and moisten with three qmuarts of brothen add boiling add one partly roasted duck, one pound of breast of beef cut in three or four pieces arind of a few pork sate simmer twenty migently until the ightn gredients are well done. Remove the duck, beef and the sages from the soup, add one cupful of sour creatm, season to taste, add the meandts, shopped parsley and serve. Japanese Fish Soup.-Sice very good-ed one carrot, one turnip, one onlon and two leeks, fry gently in ite-fourth cupful of butter for a few minutes, add the same amount of flour, mixtheheat well, add one teaspoonful of curry powder, stir for a few minutes and moisten with fish stock. Boll for twenty minutes, then add one small potato cut In squares, two ounces of cooked rice, one small chill pepper and half the rind of a lemon grated; simmer twenty minutes. Add eight ounces or half a pound of "flounder cut in squares and the same amount of cod shredded small. Let boil fiar eight minutes, season to taste and serve. Scotch $tew.-Pat six good-sized onions and one and one-half pounds of hamburger steak into an Iron ket tdone. Season with salt, pepper and let cook in the Juice of the meat for an hour or more.
