stored for future use. Especially
wlhen canning is not feasible, or cans
and jars are too expensive, drying of
fers a meatns of saving large quanti
ties of surplus products which go to
waste each year in gardens and or
chards. Drying also affords a way
of conserving portions of food which
are too small for canning.

ker, has dried successfuly 18 differ
ent Louisiana-grown fruits and vege
table:,, and the exhibit 'of these prod.
ucts inher office at Tallulah is said
to be one of the most completý ever
assembled. In includes string beans,
wa,x beans, corn, peas, peaches, peel
ed and unpeeled pears, apples, pi
mentoes whole okra, cut okra, pump
kin, sweet potatoes, spinach, celery
and Lima beans.
Of 30 public demonstrations given
by Miss Whitakerjn 1918; 15 were la
the brining, drying and cturing of
vegetpbles.
Through Miss Whitaker's efforts
46 housekeepers put up 1,001 cans of
fruit and vegetables, dried and stored
282 pounds of fruits and vegetables,
,nd brined 117 gallons of vegetableq.
Nine canning club girls working
under Miss Whitaker's direction put
up 825 cans of tomatoes, 500 cans o"
other vegetables and fruits, 100
pounds of dried fruits and vegetables,
and 25 gallono it brined vczetah!eq.
