Pour over it three cup fuls of boiling- water, soak three hours and turn both water and barley into a casserole. Cut one pound of lean beef or veal into small pieces and chop fine one good sized onion anTT one carrot; season with salt and a quarter of a teaspoonful of paprika. Place enough water In the dish to cover alt the ingredients, place the cover on the casserole and bake in a moderate oven for four hours. This will serve five people. It Is a very nutritious dish and one used very commonly in the peasant homes ot Hungary. PORK TENDERLOIN' WITH VEGE TABLES. Have cut two doaen potato balls and one dozen small white onions, ipeeled and in cold water. Place these around the tenderloin, add three tablespoonfuls of butter, another sprinkle, of salt and pepper and more, water If necessary, but It must be boiling. .Then cover the cas. serole and cook three-fourths of an hour longer. Just before taking to the table sprinkle ovar with chopped parsley. This serves four people lib. erally. ' BROWN UKKAD. One cup of molassea one cud of sour milk, one cun of seeded raisins. two cups of graham flour, one cup ot neat flour, one-half teaspoon of baking powder, a pinch of suit an,! two teaspoons of soda, leyej, In a lit tle hot water. This makes two loaves. Bake slowly for one hour. OLD ENGLISH ILUM CAKE, Three-fourths pound sifted flour one teaspoon each of salt, mace, nut- meg and cinnamon; three-fourths pound of butter, three-fourths pound brown sugar, one-half cup dark mo lasses eight or nine eggs according to size; two and one-half pounds seeded raisins; three-fourths pound citron, one half pound shelled almonds, blanched; onq-half pound Braxil nuts, three-fourths cup apple cider. Sirt the flour, salt and spices together, rub the butter thoroughly Into them. Place the sugar into another bowl and beat yolks of eggs into it. Beat until thick. Add this to flour and spices and mix well. Then add the raisins, the nuts cut Into pieces. Then mix the molasses and cider; lastly the beaten whites of eggs. Be sure tho pans are well greased and lined with paper. Bake in a slow oven about four hours, if for one cake. It te better to make, two or three weeks be" rore cutting, so as to give time to ripen.
