Sweet Sklmmllk.
there I no better ritloo for tt;
ealf than w-et klnim!lk. After tb
calf baa been weaned It still baa
cravlna fur the kind of foo4 that na
ture provided for It. The feedinr of
Dearly aour milk baa been practiced.
nd the feeding of whey, but wa are
tore that the calf baa no particular
liking for that kind of food. Voder
modern method of dairying It 1 poe-
sitle on many farm to bare the sklm
mllk sweet. Where band aeparaUr
are used, of courae it I as easy mat
ter to bare milk of the kind we hare
Indicated. Eren where the milk ba to
be hauled to the creamery, the farm
er can. If be will, hay milk that 1
weet when be get borne from the
creamery. If It ta not, he ha himself
or the creamery to find, fault with
about It. If It la the creamery, be
should take the matter in hand at
once. In many case It Is the fault
of the other patrons of the creamery.
If the skimmilk is tour when the
farmer gets home with it. The aald
other patrons have got into the habit
of hauling to the creamery milk that
is aour or nearly o. Perbapa they
are "erery-other-day" men. Tte milk
they bring I skimmed and of course
the ski mtiied milk goes into the tack
from which each man draws the sklm
mllk to which be is entitled. The
our or nearly aour ml'.k thus mixed
with the other and better milk acts as
a starter and sets the whole to sour
ing. All the farmers on returning to
jthelr home from such a creamery
find the milk aonr. This is a matter
they should look Into. There is no
reason why all should allow them
selves to be Injured by the few.
Sometimes the farmer is himself to
blame in not baring bis cans in proper
shape for tbe reception of the milk
at the creamery. It may be that he
himself la bringing milk in can that
bare "starter" in all the seam. If so.
be should clean up and clean np rigor
ously. The sweet skimmilk is what
be needs especially if calve are to
be fed, and the sweetness is worth
attiring after. The younger the calf
tbe more need there is that the milk
be sweet, for the more delicate la tbe
digestive apparatus that la to handle
it. For such animals some feeders
assert that sweet sklmmllk i worth
twice that of sklmmllk such as is
nsually received from the creamery.
Scours is one of the greatest caurea
of eatf mortality. It Is Induced by the
kind of food the calf receives, and It
is believed that both aour milk and
unusually cold milk help along the
bad effecta. Sweet milk is of too
much value on the farm k be Ig
nored. A Craamary AfioaL
From killle Iac, Minnesota, cornea
the story of a floating creamery. In
peratlon, or about to be put In oper
ation, there. It appears that th men
owning land adjoining the lake found
it difficult to realine much from It of
merchantable value, and conceived
the Idea of going into buttermaking.
The difficulty waa to get the mtik to
any central point, as the farmers on
the opposite side of th lake from any
cne point would be too far away to be
able to deliver the milk. Rowing it
across the lake was out of the ques
tion. Then some one bit upon the
pian of having a creamery In the late
afloat, which would make a dally
round of the lake and gather the milk
at cpeclSed point. A Mississippi
steamboat of small dimensions was
secured and hauled overland twenty
miles to the lake. There sh waa
fitted up with all the modem appli
ances, and at last report waa ready
to begin ber rounds. She wa to bave
twelve stopping placea, and thing
would bave to go by clockwork, aa
the creamery wa not tuppoaed to
tay longer at one point than wa
necessary to get the milk weighed In.
It will be Interesting to cot th suc
cess of this undertaking.
Pregr In Dutterenaklng.
tn no other Industry has there been
greater progres during th last few
year than In dairying, say M. Vlor
tansen. Th method employed by
buttermaker ten year ago will now
not be recognized by any uptodat
buttermaker. Th machinery I dif
ferent. The buttermaker who at. that
time was generally chosen from the
ordinary walka of life is now a man
who ha attended school for perfect
log btmself In bis profession. Some
year ago one of the leading question
at the convention waa, bow to avoid
mottle. Ibis is a thing not frequent
ly spoken of to-day. The buttermaker
at a rule now understands the me
chanical part of buttermaking to such
aa extent that ha knows kow to pre
vent mottles. The question cf most
Importance now Is bow to make a
high and uniform gride of butter pos
sessing keeping qualities. We do not
aim to make the kind of butter that
used to win sweepstakea a few years
ago aa that did not very often posses
keeping qualities. The butter now la
highest demands Is quit different
from our fancy butter of a few year
ago.
Euro pen keepers cf now are said
to bave a great advantage over Amer
ican dairymen in th matter of milk
ers, as they ran secure the services of
women for that task rather thaa of
men. Women are gentler and more
cleanly aa milkers than are men and
take greater rare to bave the udder
and tusk of lb cuws clrsa before
iulAirg.
