How to Cook Steak. .
A. woman, whose husband often extols
the steak which he occasionally at3 at
a certain hitrh priced restaurant and
wishos, after the manner or husbands,
it were, possible to duplicate it at his
own table, investigated the matter for.
herself, to discover,, if possible, the se
cret of the highly praised and distinc
tive flavor of the meat. She found
that the thick iorterhouse steak was
laid between thin slices of . beef cut
from round. On these garlic was freely
rubbed and the beef sandwich put iu
the broiler over a clear, hot tire. As
the meat- cooked and was frequently
tAirnetl the juice of the upper slices
saturated the middle piece, carrying
the garlic flavor disguised as a deli
cious arouia impossible to classify as
that of onion. . When the porterhouse
steak is nearly cooked the layers of
beef are taken off iind the st?ak quick
ly browned, ' sprinkled with chopped
parsley, butter and lemon juice and
served at once. The meat' covers are
useless after this service, as they are
dry and hard, so the price of the steak
on the restaurant menu is perhaps not
unreasonable. The inquiring house
keeper decided that the process could
not be a frequent one in her kitchen,
but for special occasions it has been
tried with marked success. A strong
heat is necessary, and if the gas llflme
is not used a little charcoal added to
the coal tire is useful to produce the
clear fire needed.

the wet clothes are placed within the
wire casing, which is then revolved at
great speed. The fabrics will then be

through the clothes and netting, carry

Color Scheme For Roonu.
- In large rooms large and solid furni
ture and subdued coloring are desira
ble. A scheme of color should bo choseu
for every apartment and must be care
fully carried out. This does uot mean
that everything must be blue or every
thing red or green, but that all tints
introduced should harmonize with the
predominant tone. A red room may
have terra eottas, tans and browns. A
blue room may admit cool grays, blu
ish greens, cream and even crimson or
rose in small quantities. Only quiet
tones, in any color, can escape the
doom of growing monotonous and dis
tasteful, so care must lie takou to avoid
pure reds and pinks, brilliant blues
and vivid greens.
Olive Oil aa u Medicine.
Olive oil is the choicest and most pal
atable of all foods. It contains the
largest amount of nutriment of any
other food, the total amount lieing
nearly .100 per. cent, while the best
grains and legumes contain less than
.K) per cent, animal meat from -2 to
20 per cent: fruits and vegetables con
tain less still. One ounce of olive oil
per diem facilitates intestinal diges
tion, encourages the action of the bow
els and aids digestion in a remarkable
way. The vegetarian diet is generally
too poor iu fats. A toaspoonful of olive
oil given three times a day to an aiuem
le child is a wonderful help toward
health. For the scrofulous child it
builds up tissue. Pure olive oil im
proves with age and may be kept for
any length of time without deteriora
tion if it is kept in a dark place and
iu an even, temperature (the ice Imx.
to retain that very fruity flavor, but if
it is exposed it is very easily contam
inated. It quickly takes up all foreign
odors. Its manufacture must be under
the best sanitary conditions.
Care of Lu uipx.
A teaspoonful of soda added to a
quart of hot soapsuds will effectually
cleanse the dirtiest lamp. Dry quickly
after washing. Lumps to 1m quite safe
must be clean, dry and filled to within
an inch of the top. Never attempt to
light a half empty lamp which has not
been used for some time. The space
iu the reservoir often becomes filled
with an explosive gas.

headboard only a trifle higher than the
footboard, and both are made inter
changeable, so as to be adjustable f
any room. Another popular model is
of mahogany, with both headboard and
footlioard of an equal height, just high
enough to support pillows.
