etc., in the several stages of fatness, 100
being the total of the animal, the figures
representing percentages of this number;

In this last table we find this iuj port-
ant point: the fat in the flesh of the
half (ordinarily) fat ox is nearly four
times that in the well fed ox, and in
that of the fat ox nearly twice of that in
the half fat, or seven and one third
times that of the well fed ox. Hence
the superior flavor and juiciness of the
meat of the reallv fat over the loaner ox.

As to the carcass and dilTerent cuts of
meat, the accompanying diagram illus
trates the whole matter: In this we find:
I, the sirloin, from which porterhouse
Bteak is made; 2. top or edge bone, from
which what la sometimes called sirloin
steak is cut; 3. the rump; 4, the buttock:
5, the lower buttock, from what we call
round steak is cut; 6 is called the veiny
piece; 7 is the thick Hank; 8, the thin
flank; 9, the leg; 10, the fore rib, con
taining five ribs; 11, middle rib, contain
ing five ribs; 12. chuck rib, containing
three ribs (for roasting and aUo for cut
ting chuck steaks); 13, shoulder; 14,
brisket; 15. the clod; 16, the neck, or
blood piece; 17, the shin; and n the
ead 18, the clia ks or head. Aa to the
several weights of these pieces, it must
be decided individually for each animal.
Now aa to the uses of these parts, the
ribs are best for roasting, and 11 the
best; 1 is also a prime roasting piece.
knd.3 is the next best roasting piece after
the ribs and sirloin many regard it as
the best; pieces eligible for soup are 9,
10, 17 and other lean bony parts; for
corned beef, 6, 7, 8, 1?, 14 and 13 are
used; 13 and 14, containing the brisket
and the plates, are the best. Thanks

ELDORADO, A NEW YELLOW RADISH.
These new varieties are catalogued by
Peter Henderson & Co. with novelties
worthy of trial, and are thus described
The Eldorado is identical with the old fa
vorite, scarlet turnip radish, in shape, size
and quality, but is a golden yellow in
color. The yellow radishes are now com
ing into more general use, as these make
an attractive contrast with the red varie
ties on the table. New Celestial is a dis
tinct variety, the stock of which was
imported from Cliina. It is ready for use
when 2 to 3 inches long, and continues
until nearly 6 inches long, making it al
most an all seasons radidh. It may be
grown in open ground or for forcing in
frames. Rapid Forcing radish resembles
the scarlet turnip, white tipped variety,
but is earlier, coming into maturity at
about twenty-two days from time of sow
ing. Having very small tops, it is adapt.
ed for forcing, though is equally desira
ble for the garden- Thanks are due to the
