Dissolve half a yeast cake in half a cupful of topid water, mix it with a quart of milk, as fresh as poBslblo; add a tablcspoonful of sugar, and when woll mixed put in bot Ucb nnd tie tho corks in with stout cords. Let stand 12 hours at a tem perature of 75 degrees, then placo on jce or turn tho bottles upsldo down until wanted. Braised Liver. Mako a dressing of ouo-half a cupful of finely chopped suet, one cupful of bread crumb3, ono toaspoonful of sweet herbs, a little grated lemon rind, and salt and pep per to tasto. Mix well and set aside while preparing the moat. Cut calf's liver in slices, not too thin, and roll each in flour, salt and pepper. Lay thin slices of salt pork in tho bottom of a baking dish and put tho liver on top of them with dressing. Add wa ter or stock to moisten and cover tho dish closely. Cook in tho owm an hour. Sorvo in tho dish In which It was cooked. Beefsteak Pie. Cut loft-over broiled steak in one-inch pieces. Cover with stock made from boof estract, using a half a toaspoonful to a cupful of boil ing water. Add ono small onion sliced, and cook slowly until the beef Is ten der. Mix mayonnnlao with whipped cream, add a ltttlo onion Julco and vlonty of rod poppor and Bait and sorvo on head lottuco with slices of lemon for garnish. Larded Sweetbreads. Soak threo heart sweetbreads in cold wator with a bit of vinegar, drop them in boil ing water for threo minutes to blanch them, then plungo into cold water, press thom botwoon two plates for a half hour. Lard with Btrlps of bacon. Put into n saucepan ono sliced carrot, ono sliced turnip, a fow sprigs o parsley, and one sliced onion; lay on top tho larded sweetbreads, and pour ovor thorn a cupful of stock, simmer slowly for thirty minutes. Molt a tnblespoonful of butter In a sau'eopan, add a tablcspoonful of flour and when woll mixed ndd to tho stock; cook; flvo minutes. DiBh tho sweetbreads and pour ovor thom tho sauco and vtsgetnbles, or tho sauco may bo strained.
