Whether it is thj quality oi the salt used that pork does not keep sweet, or the way in t\hich it is packed, the hot summer leather, or the fault of the cellars in uhich it is stored, no one pretends to know. A few tanners have mas tered the situation, but many have not. e are assured by prominent pork packers hi the west that one cause of pork not keeping nio§ and sweet is because it is sometimes salt ed and packed in the barrel while it is frozen, and when put down in that condition it is bound to spoil long bo fore the hot summer is parsed. I The following is the receipt of the Oermantown Telegraph for curing meat. That paper publishes it annu jally, and it is claimed that meat cured just in the manner prescribed always keeps sweet. As the season has arrived when curing meat is in order, we republish as of old, our famous receipt lor cur ing beef, pork, mutton, hams, etc., as follows: ••To one gallon of water take 1 1-2 lbs. of salt, 1-2 lb. sugar, 1-4 oz. salt peter, 1-2 oz. potash." Omit the pot ash unless you can get the pure article. Druggists usually keep it. In this ratio the pickle can be in creased to any quantity desired. Let those be boiled together until all tiie dirt from the sugar rises to the top and is skimmed off. Then throw it into a tub to cool, and when cold pour it over your beef or pork. The meat must be well covered with pickle and should not be put down lor at least two days after killing, during which time it should be slightly sprinkled with powdered saltpeter, which re moves ii!1 the surface blood, etc., leaving the meat fresh and clear. Some omit boiling the pickle and find it to answer well, though the opera tion of boiling purifies the pickle by throwing off the dirt always to be iound in salt and sugar. If this re ceipt is strictly followed it will re quire only a single trial to prove its superiority over the common way, or most ways, of putting down meat, and will not soon lie abandoned for any other. The meat is unsurpassed for sweetness, delicacy and freshness of color. The Presbyterian University at Pierre closed its lirst terti ou Thurs day. the 20th of leceii$#r, with ex aminations occupying ptft of Wed nesday and all of Thursday. Thurs day night the literary society gave its lirst public exercises, consisting of declamations, essays and a debate. The second term opens January 3, when there will beau increased at tendance. Light counties, Roberts, Brown, Brookings, .Bon Ilomme, Miner, Hand, sully and Hughes are represented among the students. Another building has been secured tor the accommodation of students. The aide president, the Rev. T. X. Findley, is very much encouraged by the results thus far achieved by his school. His success as an educator is now certain. Canton is struggling to secure the removal of the JJeJoit college to the west side of the Sioux. A town which secures the location of a good college gets a benelit which is worth more to it than people at lirst tlush appreciate, and if there is anything in reason which our Canton friends can do to provide them with a good higher edu cational institution, they ought not neglect the opportunity. Sioux Falls is beginning to know better than ever that she did a most excellent thing for herself in capturing the Dakota col legiate instit ue and the territorial deaf mute institution, and the Silsbee com mercial college and befere another Christmas she will have a young lady's seminary unequaled in the ter ritory. The three educational enter prises already in operation bring scores of people to the city who would not otherwise come, and have increased..the population and the business very materially.
