calls being the guest at the home
of an inter-married couple who
took notice of the holiday of
Chanukah (every year, they as
sured me!) by serving grated po
tato pancakes with wine to all
their guests. That’s one way of
making Jewish food customs a
factor in Jewish continuity! It
was delightful!
So, why not give a Chanukah
Latkes Party this year? If not for
the grownups, then make it a
children’s party. They’ll love it!

Latkes, Chanukah style:
4 pounds potatoes
1 large onion
4 eggs
1 cup flour
2 teaspoons salt
Melted vegetable shortening
or oil for deep frying
Pare and grate the potatoes
into a large mixing • bowl.
Squeeze out some of the liquid.
Peel and grate the onion into the
potato. Add eggs, flour and salt
and stir to make a smooth batter
that will be thick enough to drop
from the spoon. Have enough
shortening or oil to be about 1
inch depth in a heavy frying pan.
Heat the shortening before drop
ping the batter with a spoon to
make 3 inch cakes. Cook over
moderate heat till brown under-
and crispy at edges. Turn
each cake to brown on the other
side. Remove with a pancake
turner or perforated spoon. Let
drain before placing on layers of
paper towels for draining off ex
cess fat.- Serve hot with apple
sauce, cranberry sauce, sour
cream and/or creamed cottage
cheese.
Serves 10 to 12.
