Cold storage for the preservation of eggs is not available in many cases so one of the experiment stations has been investigating the most economical and effective methods that can be used by farmers for this purpose and reports in favor of water glass. The spiling of eggs is due to the entrance of air car rying germs of decomposition through the shells. Originally the shell has a surface coating of mucilaginous mat ter which prevents the entrance of these harmful organisms, but if this coating is removed or softened by washing or otherwise the keeping qual ity of the egg is much reduced. Packing eggs in lime, salt and other products to keep them for winter use are all based on the principle of pre venting the entrance of these germs. Out of 20 methods for the preservation of eggs tested the three most effective ones were found to be coating the eggs with vaseline, preserving them in lime water and preserving them in water By the latter method, the application of which does not cost more than one cent a dozen, no appreciable difference was observed in eggs that had been kept from July to the present date. Fresh eggs could not be distinguished from them either in taste or in their behavior when beaten up for cake bak ing. Water glass is simply sodium or potassium silicate, sodium silicate be ing usually the cheaper. Water glass can be made at a cost not exceeding 50 cents a gallon, and one gallon raised with ten times its volume of water is sufficient for the preservation of 50 dozen eggs. The preserving process consists in packing strictly fresh eggs in a jar and pouring the solution over them, covering them well and placing them in a cool, dark place, such as a cellar. The only drawback with eggs pre served' in water glass is that the shells usually break in boiling water. This must be avoided by carefully piercing the shells with a strong needle. J. has improved methods and Fair Play for Railroads. Two eminent railroad presidents, Mr. Callaway, of the New York Central, and Mr. Ingalls, of the Big Four, Have put themselves on record •before the in •dustrial commission at Washington, in favor of legalizing the pooling of earn ings by railroads. Mr. Callaway, whose ability as a railroad manager and whose remarkably successful ex perience entitles his judgment to great weight, said he did not believe that if pooling were legalized this authority would result in general increase of freight rates. He was willing that the interstate commence commission should ihave the supervision of rates in like most other thoughtful men, he not admit th£»t the government had case of such authorization, although, any more right to interfere with the management of raiilroaids than with that of any other business, nor did he believe that government ownership of railroads was practicable. Presi dent Ingai'ls expressed himself much on the same lines, but he went further in favoring s\ law enabling the rail roads to make rat» agreements, and to have the .maintenance of rates con trolled by the courts. He advocated the compulsory publication of all freight rates, and said he was w'lling to submit for inspection the books of railroafl companies, just as the ibooks of national banks are inspected. Those who recall the not very distant period in which two-thirds of tht- railroads in the country went into the hands of the receivers, mainly because they were powerless to maintatin rates, will real ize the beneflcient results that would follow the repeal of the anti-pooling statute and adoption it3 stead of some sensible, practical plan for the supervision and ^regulation of railroad rates on an equitable basis, fair bath to the public and the railroads There is need of a campaign of education on this question, ajnd we are glad that Presidents Callaway and Ingalls have opened it in an effective way.—Leslie's Weeklv. bKUAL NOTICES.
