Finnlly a manufacturer succeeded in producing a combination of oil nnd spices which removed tho trouble. The herrln" used in making sardines aro about four inches long, nnd can be bought of the Mnlno and How Brunswick fishermen, wheu plcntyf for about $5 a hogshead, although when scarce they bring m high as $15 a hogshead, Tho fish are caught In huge nets along tho shore. On tlio average, ench child dresses seventy-five fish a minute. Tho pay Is ten cents for,n box holding about a bushel Some of the chlldicn make as much as $1.50 per day. After being washed, tho fish nro picked for half un hour, nnd aro then laid upon trays nnd placed in a largo drying-room, heated by steam. When dry they nre thrown Into large shallow pans of boil ing oil, and thoroughly cooked. They nro then packled in boxes by women nnd girls, and Into each box is poured somo of the patent mixturo of oil and spices. Covers nro fitted on tho boxes and sealed by men. Tho boxes nro next plated in boiling water for half an hour, aud are then removed and put on an in clined plane, so that tho enclosed hot nir rustics to one corner of tlio box. This corner is punctured with nn awl, and tho air escapes; tho box then being mado air tight again by a drop of solder. Tho boxes are ornamented with attractive French labels, stating that tho enclosed aro 'Sardines a la Francalso.' Somo nro labelled in addition, 'a l'huile d'olivo.' The oil generally used Is cotton seed. Olivo oil is, however, used for tho qual ity marked prime. "Almost tho cutlro product of these factories Is Bhipped to New York.whenco it goes to retailers all over tho country. Ono of tho Lubco houses prepares nbout 4,500 boxes per day.
