The small amount of fat present in plain cottage cheese is negligible as far as any fattening property is concerned. In fact, cottage cheese with raw fruits and vegetables forms a suit able part of a reducing diet because it furnishes protein, minerals and vitamins In liberal amounts." It Is possible to purchase cottage cheese to-day pleasantly moist in a handy, sanitary container. It can be used In any menu as a main dish, salad, sandwich filling or des sert, for It blends perfectly with other foods. Cottage Cheese Dressing H cup milk % cup vinegar (not too strong) 1 egg 1 cup soft cottage cheese 1 cup sour cream, whipped 1 tsp. salt 1 tsp. mustard % tsp. paprika 2 tsp. flour 1H tsp. melted butter Mix the dry ingredients together and cream them with the melted butter. Add the creamed mixture to the heated milk and stir until very thick. After the mixture has boiled, add vinegar slowly, stirring al lthc while. Cool slightly and add beaten egg. Put the cottage cheese through a sieve If necessary to break up lumps. Using an egg beater, bent the cottage cheese gradually Into the dressing until smooth. Lastly, fold whipped cream Into dressing. Cottage Cheese Mold 114 cups cottage cheese % cup boiling water 1 cup cream, whipped 2 cups mixed fruits 1 pkg. lemon Jello Vh tsp. salt 1 tbsp. sugar ',4 tsp. cinnamon Put the cheese through a sieve, add sugar, salt and cinnamon and whipped cream. Add Jello dissolved In boiling water. Add fruits. Put In molds and chill until set. Un mold and serve on lettuce with fruit salad dressing. FLORENTINE EC.OS Finely chop cooked spinach and season with butter and salt. Put one tablespoon spinach In each but tered Individual mold or custard cup, sprinkle with one tablespoon Parmesun cheese, and slip Into each an egg.
