AMOUNT OF BUTT1R II MILK. With the view of learning the amount of butter to be obtained from a given quantity of milk, I have recently tried the follow ing experiment at my creamery in Onon dago County, N. Y., where I received milk from three hundred cows. The milk delivered at the factory on Saturday evening, July, 30th, and Sun day morning July 31st, amounting to 572!) pounds, as soon as received, was run into deep cooler pails, and these were set into the tank of spring water. The temperature of this water is maintained at a uniform temperature of 53 degrees by the introduction of an Inch stream of water from the the spring. In this vat the pails remaned for about thirty hours, when they were removed in order that, by a free exposure to the at mosphere, the milk might be soured. It might produce a better result if the paiie hi)u been allowed to remain Immersed in the water until the milk became loppered, but wo feared that so long an exposure of the milk and cream to such a degree of cold would cause a bitterness of flavor to the cream and the butter made therefrom. When about forty-eight hours old, the milk having soured and thickened, the cream was removed and kept until the next day. On Wednesday churning was done in large dash churns operated by steam power. From this 5729 pounds of milk there was produced 232 pounds of butter. This shows an advantage of 24 09-100 pounds of milk being required for a pound of butter, very closely meeting the opinion generally held, that two and a half times as much milk is used in making a pound of butter as in producing a pound of Cheese. At the season of the year above named a yield of one pound of curd cheese from ten pounds of milk is very satisfactory. This would have pro duced 573 pounds of cured cheese from the milk used in this experiment, which gave me 232 pounds of butter. Cheese at that time was worth 14 cents a pound. Hutter to pay as well as cheese at this price, would need to sell at fully 35 cents a pound, allowing that the material used in making and packing butter cost one half cent per pound more than those required for cheese. From this loppemt milk, which in my case, went to»the pigs, there is sometimes made a kind of cheese used mainly by the German Jews. The curd is heated to a high temperature, is not salted, but is placed in small bags holding about one half a pound, and subjected to moderate and long continued pressure. When re moved from this pressure, the cheese is cone shaped, two sides being flattened, salt is rubbed upon tho outside and the curing is done in a cool damp place, as is the case with Limburg cheese. There is small demand for this kind of cheese, and if there was a large demand, the preju dice of the Jews will allow them to eat only that which Jewish hands have made. —Gardner B. Weeks, Syracuse, if, Y. in Western Rural. A HEALTHY BREAD. The most economical and best bread, es pecially iu cold weather, when a hot fire is constantly kept, is what is sometimes called gems or unleaven biscuit. For this pur pose a group of cast-iron pans or cups two and one half by three one naif inches each, all made in one casting, is used. These pans arc set on the top of a hot stoVe and al lowed to becoine.almost smoking hot when buttered for use. Then with cold water and milk, half-and-half, or with cold water alone, and the colder the better, mix and stir quickly with n stiff spoon as much Graham or unbolu I wheat-meal as will make a stiff batter or thinnish mush; and when the pans are hot, fill them quickly with the thin dough and let them stand a minute on the stove before putting into a very hot oven, where they should remain twenty or twenty-live minutes, until done. If the mixture be neither too thin nor too stiff', and the pans and oven be hot, you will have twelve as light and wholesome biscuits as any epicure could wish to eat. They can be eaten smoking warm from the oven, as the contain no poisonous chemical elements like yeast bread, which requires cooling to be rid of. They are good cold, or may warmed in a steam kettle. Any body, however unskilled in cooking, can learn to make these light and nice every time. Nice, iresh wheat-meal, very cold wetting, quickly done, with a very hot place to bake them, will insure the best of “luck” always. These, like all other Graham bread, should be fresh every dav. For growing children, and those people who work or think, and especially students and sedentary persons, there is no other bread, and scnrcly any other single article of food, that equals it.
