FOR BACK PORCH EATING By BETTY COOK We still have two whole months of outdoor dining ahead, so get out those paper plates and cups, Mock up on peanuts and pickles, then spend a few minutes in the kitehen to make a eool salad and a punch. The punch can he prepared almost in seconds. Just take out the ice, open up a can each of pineapple and grapefruit juice, add sugar and water to a package of grape soft drink powder, and mix all together in a t all pitcher and there you are! The salad is a "quickie" too, made with packaged pre-cooked rice as the base. It has chicken and grapes for taste and glamour, and the peanuts for crunchy tex ture. It's a meal in itself and mighty attractive, too. with gar nishes for both color and enjoy ment. Maybe you haven't a cut little "guardsman" to stand at attention over the peanuts, but they're just as tasty served on a paper plate, and really “finger-licking” good to eat. Come on now. let’s enjoy these evenings -it’s Summertime. Chicken Salad Royale *4 cuj coarsley chopped peanuts cooked rice H teaspoon salt I*4 cups boiling water cup mayonnaise *4 cup French dressing 1 t easpoon salt *4 teaspoon pepper 1*» cups diced cooked chicken 1 cup diced celery I*4 cups halved green or white seedless grapes *4 cup coarsely* chopped peanuts Add packaged pre-cooked rice and *4 teaspoon salt to boiling water in saucepan Mix just to moisten all rice. Cover and remove from heat. Let stand 13 minutes. Then uncover and let cool to room temperature. About an hour before serving, combine mayonnaise. French dres sing. 1 teaspoon salt, and the pep per, mixing well. Combine chicken, celery, seedless grapes and pea nuts in a bowl. Stir in the mayon naise mixture. Then add the rice and mix lightly with a fork. ChlD. Serve on crisp lettuce. Makes a bout 6 cups or 4 to 6 servings. Garnish with small bunches of grapes, if desired. Pineappledrape Punch 1 package grape soft drink powder 1 cup sugar Water and ice cubes to make 2 quarts 2 cups pineapple juice 2 cups grapefruit juice Dissolve soft drink powder and sugar In water. Add pineapple juice and grapefruit juice. Mix well. Makes 3 quarts, or about 24 servings.
