Manufacturing enter- ? irises, of tartous kinds, are being discussed a this city, man; of which will, no doubt, be undertaken, probably on a small scale at first, but the? will grow ind flourish, and in a few years will become great industries and contribute largely to the growth and business of Dallas. Una of the latest spoken of is a fruit and vegetable canning establishment, Ibis is an industrial pursuit that is growing rapidly in this country, and trora the great per cent It pays on the npt.al invested, is likely to increase ev erywhere. An exchange says in 1870, 07 bouses were reported in business; in 1SX0 the number had increased to 411. In the former year the value" of the products was $5,4110 OoO: In the latter it amounted to $17 000,000. The details, II gives, would show e corresponding increase in the number oi articles canned. Foinierlv but a compara tively few things were preserved in this way. Now about every kind ot fruit, veg etable, meat and fish i put un for use in ny season or any place. Should a coming establishment be erected in this city, it would afford a ready market, not only for all kinds of fruit, but for all the vege tables grown in this portion of the slate, and would give employment to numerous email famerawho would eve more atten tion to truck (arming. It is intended to unite with it a vinegar manufactory ana it is also projected to put up pickles both in wood and glass. That It will be one of the best bavins and most nrolitable undertak ings yet spoken of in mis city there can be no aouut, ana it snoniu do lnaugurateu nr. the earliest day possible, that steps may be taken to Secure all the necessary fruits end vegetables next season to make the un dertaking successful. OBAIN AND BRIADSTUFTS. The market has been remstkably quiet to-day and very little grain otterea on me etreets. A car of corn was forwarded to Abilene and another will follow to-morrow. The new crop has not yet put in an appear ance on the strecs, but dealers ssy they will begin to receive lightconsignmenta belore the week closes. Prices for old grain are steady, while no value has yet been placed on the new crop. UUC f iTIONS TO-niV Whsat Choice, Hoe : medium, 80c.; low grade, 75ri.; Nicaragua, WoCOd. Rys- Firm etM Mo. ' The Han Francisco Chronicle says in re verting to the probable yield in California, we have the following leading estimates for 1883; Bushels. Tallmarlge (Chicago) vu kki,ouj Reuss (Hi. Iul) , M.iOO.oofl White & Llsssk (Han Francisco) nfl,UU.0OO There is a dilt'erence between the lowest nd the highst of 27.CC) bushels, or nearly 100 per cent. Messrs. White & Lissa, hav ing made some close estimates In previous years entitles tbem to consideration. They give acreage seeded to wheat this year in Calitornia at 3,350,000, which, produc'ng on an average seventeen bushels to the acre would return a yield of 6900.000 bushe's. as before stated, but it is now held by so oe that the average per acre will, from present indications, reach twenty bushels. At all events, California will certainly be the ban ner wheat state in im.'m TRADE ITEiS. A bushel ol corn weighing 50 pounds will yield between 28 nnd 30 pounds of glucose, or grape sugar, and In adulterating sugar from 18 to 20 per cent, of the grape sugar is genera'ly used. In Europe potatoes are generally used for the mauulacture of glu cose, and the manufacturers find larger profits than from corn. A plant called ma nioc, a native of Sout hand Central America, is said to produce 56 pounds of glucose to the bushel. As this plant yields over 600 bushels to the acre, It is not improbable that manioc may be the "sugar cane" of the future. The so-called Brazilian arrow root and tapioca of commerce are made from the cassava or manioc plant. The manufacturing Jewelry trade at Providence has been more quiet this year than during the corresponding months tor several years past, and this mouth shows no improvement, although many are mak ing up goods ahead in anticipation ol the fall trade, which, It is hoped, will set in soon after the July holidays. Orders are now being received, but the trade ae obliged to figure close and at prices which show no margin to the smaller manufacturers, who labor at a disadvantage. The market is thought to be in a healtby condition and stocks in the hands of dealers are reported light. Cotton-seed oil t an artiole that Is des tined to supersede lard as an article of food. It la the expressed oil ot the seed of the cot ton plant, and, although classed with Un seed oil In the market, Is of au entirely different composition, possessing: neither the taste nor laxative qualities of tho lat ter. It Is too cheap to be adul terated, and ti even purer lor domestic use than the animal product. Its introduction waa difficult; but it is rapidly growing In favor. The produot will always exceed lard, and as the lard will be displaced bv it for many puriiosjs, a revolution In lard manufacture must sooner or later eventfully occur. Even the oleomargarine manufac tures are using ootton-seed oil, and as many improvements are constantly being made in the modes for preparing It for market, no one can tell to what use It may be des tined, It being yet In Its Infancy, so lar as dapatlon to family purposes are concerned. There Is this In favor of cotton-seed oil, whloh Is that the popular favor is in the di rection of vegetable oils for domestlo use In preference to lard; and the fact that the adulterations of lard and butter are no , longer disguised should make ss happy that ws have so harmless snd wholesome a ubstltue as cotton-seed oil. The following facts concerning the frog industry are taken from a Boston exchange; A few years ago frogs' legs were a com. paratlvely rare dish In Boston, but now f hey are regularly served at all hrst-class bote's sad restaurants, and a considerable number are sold ior family use. The de mand Is fully three times what It was two years sgo, aud frog catching and preparing for market Is now a recognised business. The Boston market Is supplied with frogs from the oountry towns In this vicinity, from Caps Cod and from Mains, snd few are received from New Hampshire and Ver pont. The Maine frogs are caught and kept in fresh water until needed, and then shipped alive In crates made for the pur- Boss, and nmvldarf with ut tnnmm k . EM Wd. Tba in Irani har n,t klll.l ' -d. Prices In this market range from 30 cents to 60 cents er dozen, sometime even higher, according to site and quality. Canada used to ship the frogs' legs packed in Ice, and used to supply this market almost wholly a few years ago, buttheuom neution ot the domestic article has drivei the foreiro out ol the market, and the Canadians now ship wholly to New York city. All kinds of frogs are eaten, but the speckled Irog is sam to oe ine most lender. Some froge have recently been shipped alive to Knclund by a Boston dealer, and were received in good order. It is possible that an export business may be developed as the first lot was readily disposed of. and as the bull-frog is nut au Inhabitant of British wateis. The Utica, N. Y-, Herald says, nobody was surprised last week when cheese tumbled from 13 to K'Jo, nor will anyone be paralyzed this week to witness another decline of somewhat sinilla- proportions. The nearer we get to bav cheese the closer must be the liuurea on graxB stock. Urato is now looking well, and cows will be very irenernllv turned out iltirintf the present week, liut at the best it must be a couple of weeks belore any grass cheese can iind its way to market, and lolly three weeks before the louuer stock win oe lainy Clean, ed up. Meanwhile the market hus plenty of margin to make a decline on, as will lie seen bv comparing prices ot the present time with those of former years. Against UJc lor the top price in JNuw lork, Satur day last, we can place lljo for the corres ponding day in lhHl. 10c in W2. Vi 3 4c in 1880 (an exceptional year). 8Jo in 1870 and 0c in 1878. The average of these live years is 10Jo, or 2Ju below the present market. A week ngo yesterday was low tide on the Utica market lu 1882, the bulk of the sales then made being at 10 1-4 cents, which wns not again touched during the season. This year the low point has not been reached so soon, but that is b cause the make Is somewhat heavier and the exports unfortunately lighter. Bales men wee plentiful to-day, and the number ol lots taken ran up to considerably over 100,' They were, however, very small, but the present stock is being shipped as last as Its age will permit. The make is now ac knowledged to be equal to last year's, and it would not be surprising il it should sur pass that. The market to day was active, and there was a good deal ot "shopping" done by salesmen to get bids raised if pos sible. Hut buyers stuck fairly well to their text, nnd seldom varied Ircm their price set for tho ruling early in the afiernooii. Transactions lor the day include 133 boxes, at private terms; two lots of small cheese, 152 boxes at 11 3-4 cents; 10 lots. IM7, boxes, at 11 fi-8 cents; 3,733 boxes, in 07 lots, ut 11 1-2 cents; 8 lots, 270 bores, at 11 3 8 cents; 70 boxes, at 11 14 cents, and 188 boxes at 11 cents. Bales, 6,238 boxes; commissions, 1.180 boxes total, 0,418 boxes. Ruling p-ice, 111-2 rents. Transactions a vear ami were 5,213 boxes, at 10 to 11 1-4 cents. A letter from Granite canyon, Wyoming territory, dated April Lnh, published iu the 1) rovers' Jonrnal. conuina the iollow- ing : The stock interest In this section of Wyoming looks favorable, as grass is near by, and ranchmen can begiu to estimate t-e loss ot cattle with some accuracy, tbough there are sometimes snow-storms alter this date which alieel their cattle s riously, but, as we have had a good deal of snow, it is hoped there will be favorable weather on, to good grass. The loss on cat- lie tots winter Pas been very light; a tew old and thin cows have died, but I don't kaow of tba loss of a steer or bull this winter, and not 1 per cent, ol cows in this vicinity. The can crop win be lighter this vear than last on accojnt of unfavorable weather in April. March was very favorable, but a greater ir ceni. oi calves came in April than in March, and in Mav mora than in Anril Last year was an unusually good crop of calves, and think this yeur will be fully np to the average call crop, tattle are In as eood condition as usual, aud if the weather is favorable for grass some beef will do to ship as soon as gathered on the round-ups. The range has oeen good here all winter, and is yet. Mostly short-horn grade bulls are used. A lew trade iieieiorda are nam. Think there will be tn same amount of oeel snipped this year as laal. Thiuk not luore, as comparatively lew cattle were dnveu in last year. Tatile are held at higher prices thuii lat year. Think a few who sold lust year ti id u ilillicult to rein vest in came, rorrlgti cu.iitul seems to I uke all cattle ana rnnucs ih.u ate offered, and uever a sale made bv foreigners to Alio rn-aiia. It lorelen capilnl continues to in a up American so ck auu grass.posteritv will rise up and winder thut their fore- luiliers sold wiiut tu.w seems their birth ru'la, Hiul no doubt will seem so to them The next generation will want a show in the cuttle oiiMne-s, hut ut the strides thut foreign capitul is iimklnir. in Wvominir uml Dakota there will he but lew Americans ut the next generation in the cattle business. Americans can't invest any better, and the inllux of loreign capitul out-lit to be ti e evidence, and tht cupitul waudering so I'nr and abroad and in Vested in what is teamed (by eastern men) an unsafe and lawless country .should Cause Americana to tighten their grip onl avored opportunities to retain land and crass and herds roam and iiiree.lv bene lit thHitisolvnii and a strong sage that posterity will be ben- euueo. i no siock Dusinesi will, no doubt, be carried ou for generations here, for in no country are iimuiuls so healthy, owing to the high and dry atmosphere. There is a general feeling lavorable to taking up bulls until July, hut it is very dilllcull to get mem up iu winiet; as tuey roam over such a vast country they would have to be taken up iu Hid lull, ami but few ranchmen ure favorable to taking them up so early. There is but little hay put up; only a tew put up quantities who have good meadosvs. Kauclimen who have quantities of bay usu ally leed it to beef steers for spring market. There has been a good deal of lancing done in some localities whicti the general lceliag is against, and it certainly is wrong to mo nopolize so much public land, and hopes are entertained that it will be stayed. Cat tle do not do so well in inciosures, as they drill, against the fence during storms ami are often launched in a bleak, open country where there are no wind-breaks. The Union l'acillc railroad company isoU'eriug its land in such large quantities that the majority ot ranchmen are not able to buy, aud, il persisted in, capitalists alone can buy, iintl those of moderate means will have to sacri fice their improvements on railroad land, and those on government land be fenced in oftentimes, and litigation be the result. It is honed the railroad company will sell in small lots. TO-DAY S UUITTATIOKS. Baar Oattls Butciiurs stoez, graai fed, lei ooru fed, 6 c. Barren oows Fat, 5 oenta, Bhippins b'i oenta.
