I have seen in the Rural various receipts for Graham bread nJ a I make no other kind, have watched them closely to see if I might imnrove vmon mv rule, but have tried none that I Uke as well as mine. Here it is : Stir a sponge of fine flour at night, us insr a teacup of warm water for sponge. In the morning, take a pint or more of wetting, part milk ; to this add half or two-thirds teacup molasses, into which is beaten to a foam hall teaspoonml soda. Into this stir the sponge and graham flour enough to make as stiff as can be mixed with a large iron spoon. Put in to the tins and set in a 'arm place to rise for the oven. Let it get pretty light, if it takes two hours, which it often does. This makes two loaves. I like it well baked, an hour or more. PU Crust. Let me give you my kind of pie crust. I noticed in a recent num ber of the Rural a suggestion that squash or pumpkin pies be baked in custard cups, to avoid the solid, indigestible crust we always have with a pie that has a liquid filling. Please try the following rule, and I think you will not want a sauash or custard pie minus the crust : Take equal parts of Graham and fine flour; rub the shortening in as usual but do not make it very rich ; to the water which is used for mixing, add a little mo lasses, say two or three tablespoonfuls. into which is thorougniy stirred one- fourth of a teaspoon of soda ; knead a little softer than ordinary crust. Graham Pudding. And now, shall I tell you what to cook for breakfast, when you do not know what to get, and that something simple and healthful ? Gra ham pudding (or mush,) with maple sir- up ; or, in absence of the maple, use a sirup made ot light brown sugar. We make th pudding same as corn meal pudding. It is more easily made free from lumps by stirring a part of the flour m com water, ae sure that it boils be fore adding the remainder of flour, also that it boils while stirring in the latter : and I let it boil several minutes after this. The agricultural College Bill is now a law, and it is of interest to see what its provisions are. The bill provides for the establishment of one college un der the provisions of the Act of Congress to be known as the Ohi and Mechanical College, the leading ob ject of the College being to teach such branches as relate to agriculture and the mechanic arts ; not, however, excluding d.w.u,, aim udssicai studies. Nineteen trustees, one from each Con gressionai District, are to be appointed by the Governor and confirmed by the benate, the twentieth trustee being the I ' ocate cai"d of Agricul ture.
